Warm Brussels Sprouts Caesar Salad

This Warm Brussels Sprouts Caesar Salad is made with shaved Brussels sprouts, bacon, potatoes, sundried tomatoes, Caesar dressing, and Parmesan cheese. It has all the flavor of Caesar salad in a warm and cozy fall side dish!

Ingredients

  • 4 strips bacon chopped
  • 1 large yellow potatoes washed, diced, and patted dry
  • 1 tbsp. olive oil
  • 1 - 9 oz. bag shaved Brussels sprouts
  • 1/3 cup sundried tomatoes
  • 1/2 cup Caesar salad dressing
  • Salt and pepper to taste
  • Shaved parmesan for topping

Instructions

  • Heat skillet over medium heat. Add bacon and cook until crispy. Remove from skillet, and set aside on a paper towel.
  • Add potatoes to skillet. Leave undisturbed for 2-3 minutes, then stir. Continue until potatoes have softened. Remove from skillet and pat dry with a paper towel.
  • Wipe out skillet and add 1/2 tbsp. oil. Add potatoes back into skillet and cook, undisturbed, until they start to brown. Stir and repeat until browned on all sides.
  • Add the last 1/2 tbsp. olive oil to the skillet and add the Brussels sprouts. Cook until softened.
  • Just before serving, stir in slivered sundried tomatoes and season with salt and pepper. Toss with Caesar salad dressing and serve with shaved Parmesan cheese on top.
