White Chocolate Chip Pumpkin Bars

Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp. baking soda
  • 2 tsp. pumpkin spice
  • 1/4 tsp. salt
  • 1/2 cup unsalted butter softened
  • 2/3 cup brown sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1/2 cup canned pure pumpkin puree
  • 1 cup + 1/4 cup white chocolate chips or other preferred chocolate chips

Instructions

  • Preheat oven to 350 degrees.  Spray a 9-inch square baking pan with nonstick spray.  
  • In a medium bowl, whisk together flour, pumpkin-pie spice, baking soda, and salt.  
  • Cream butter and brown sugar with an electric beater.  Add egg and vanilla.  Add pumpkin and beat until combined.  
  • Reduce speed and add dry ingredients.  Mix until combined. Fold 1 cup of the chocolate chips into batter.  
  • Spread batter in your prepared pan. Sprinkle 1/4 cup white chocolate chips on top of the bar mixture.  
  • Bake 30-35 minutes or until center comes out clean.  Cool before cutting into squares and serving.
