Ingredients
For the meatballs:
1lb.ground pork
3scallionschopped
2garlic clovesminced
Splash of sesame oil
2tbsp.low sodium soy sauceor your favorite soy sauce
1-2inchpiece gingerpeeled and grated
1egg white
1small head bok choyleaves removed, cleaned, and chopped
For the soup:
32oz.approx. 5 cups vegetable or chicken broth
25-35wonton wrapperscut into strips
2small heads bok choywashed and roughly chopped
Pork meatballs
Green onionschopped, to garnish
Optional: 1 inch piece gingerpeeled and grated
Instructions
For the meatballs:
Preheat oven to 400 degrees and line a baking sheet with parchment paper.
Mix the meatball ingredients in a mixing bowl. Form mixture into small, 2 inch meatballs and place on the prepared baking sheet.
Bake for 18-20 minutes or until fully cooked through.
For the soup:
Bring the vegetable broth to a rolling boil.
Carefully drop in pork meatballs and bok choy. Cook until the bok choy starts to wilt, about 4 minutes.
Add the wonton strips and cook for about 5 minutes, or until the wontons are soft.
Spoon soup into bowls, garnish with green onions, and serve.
