This Apple, Bacon, and Brie Flatbread is an easy fall lunch idea made with Brie cheese, sliced apples, bacon, shallots, baby spinach, pepitas, and a drizzle of balsamic glaze.

Ingredients
2strips bacon
1small shallot or half of 1 large shallotsliced thin
1naan flatbread
1small Rave applecored and sliced thin
1/2cupBrie cheese
1/4cupbaby spinach
2tbsps.pepitas
Coarse sea salt
Optional: balsamic glaze
Instructions
In a medium skillet, cook the bacon over medium heat until desired crispness. Remove from pan and drain.
Wipe out pan and add shallot, cooking over medium heat, about 5-8 minutes, or until softened. Keep warm.
Preheat to 400 degrees and place flatbread onto a baking sheet.
Add Brie and apples onto flatbread and bake 10-12 minutes, or until Brie has melted.
Place flatbread onto a plate. Crumble bacon and sprinkle on top along with the shallots, baby spinach, and pepitas.
Season with sea salt, drizzle with balsamic vinegar, cut into 4 pieces, and serve.
