Apple, Bacon, and Brie Flatbread

This Apple, Bacon, and Brie Flatbread is an easy fall lunch idea made with Brie cheese, sliced apples, bacon, shallots, baby spinach, pepitas, and a drizzle of balsamic glaze.

Ingredients

  • 2 strips bacon
  • 1 small shallot or half of 1 large shallot sliced thin
  • 1 naan flatbread
  • 1 small Rave apple cored and sliced thin
  • 1/2 cup Brie cheese
  • 1/4 cup baby spinach
  • 2 tbsps. pepitas
  • Coarse sea salt
  • Optional: balsamic glaze

Instructions

  • In a medium skillet, cook the bacon over medium heat until desired crispness. Remove from pan and drain.
  • Wipe out pan and add shallot, cooking over medium heat, about 5-8 minutes, or until softened. Keep warm.
  • Preheat to 400 degrees and place flatbread onto a baking sheet.
  • Add Brie and apples onto flatbread and bake 10-12 minutes, or until Brie has melted.
  • Place flatbread onto a plate. Crumble bacon and sprinkle on top along with the shallots, baby spinach, and pepitas.
  • Season with sea salt, drizzle with balsamic vinegar, cut into 4 pieces, and serve.
