Apple Pie Overnight Oats

If you love a slice of fresh apple pie, you’ll love these Apple Pie Overnight Oats! They’re made with a warm and cozy apple filling and topped with walnuts and more apples!

Ingredients

For the apple filling:

  • 1 small-medium apple chopped
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/8 tsp. ginger
  • 1 tbsp. maple syrup
  • Pinch of salt

For the oats:

  • 1/2 c. old fashioned or quick oats
  • 3/4 cups oat milk or other plant based or dairy milk
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/8 tsp. all spice
  • 1 tsp. chia seeds
  • 1 tsp. honey
  • Optional: dried apples or crushed walnuts for topping

Instructions

For the apple filling:

  • Add apples, spices, maple syrup and salt to a small sauce pan. Stir to combine.
  • Heat over low heat. Cook about 8-10 minutes, or until apples are tender.
  • Increase heat to medium and cook an additional 3-4 minutes to allow mixture to thicken.
  • Once thickened, remove from heat and set aside to cool.

For the oats:

  • In a small mixing bowl, add the oats, milk, vanilla, spices, chia seeds, and honey. Stir to combine.
  • Add a layer of the mixture to the bottom of a jar with lid.
  • Once cooled, spoon a little apple mixture on top of the oat layer.
  • Continue layering until you reach the top of the jar. Then, top with dried apples or walnuts, if desired.
  • Cover jar and place in refrigerator overnight.
  • Enjoy oats cold or warmed up.
