Apple Pie Overnight Oats

If you love a slice of fresh apple pie, you’ll love these Apple Pie Overnight Oats! They’re made with a warm and cozy apple filling and topped with walnuts and more apples!

It really isn’t the most convenient time for me to think, “Hey!  Let’s cut back on sugar!”  Cause it’s basically the start of pumpkin and apple season. I mean, I love a slice of pie and ice cream during the summer. When the pumpkin bread, apple cider donuts, and fall pies make a reappearance, that love for sweets gets tripled!

So how do I get the best of both worlds without my body taking a major hit from all that sugar?  I got creative and put a healthier spin on one of my favorite seasonal treats – apple pie.  Remembering the pumpkin overnight oats I’ve made, I decided to make apple pie inspired overnight oats.

What I love about overnight oats – besides how easy they are to make – is that they’re pretty easy to customize, too.  Once you have the basics down – oats and milk – you can go crazy with add-ins and toppings!

I start my overnight oats with old fashioned oats and oat milk.  You could also use quick oats and/or your favorite plant based or dairy milk.  From there, I usually mix in my add-ins.

But for these oats, I’m dicing up apples and making a quick, pie-like filling.  Once done, it’s layered between my oat mixture and placed in the fridge overnight.

Apple Pie Overnight Oats

While just the oat mixture and apple pie filling are enough to satisfy that craving for all things fall, I like to top these oats with some crushed walnuts.  They’re even good with some dried apples on top.

To start our oats, we need to make the apple filling first.  Add the apples, spices, maple syrup, and pinch of salt to a small sauce pan and heat over low.  Then, stir everything up and let it cook for about 8-10 minutes.

Once the apples have softened, kick up the heat to medium and allow the mixture to thicken.  This should take only about 3-4 minutes.  When the mixture has thickened, remove it from the heat and allow it to cool.

Now, we can start the oats.  In a small mixing bowl, add the oats, milk, vanilla, spices, chia seeds, and honey. Stir to combine.

Grab a jar with a lid and add about 1/4 cup of the oat mixture to the bottom.  Follow with the apple mixture and continue layering until you reach the top of the jar.

Before popping the lid on, add dried apples or crushed walnuts on top, if you desire.  Then, cover and refrigerate overnight.  The next morning, you’ll be all set to enjoy these oats right out of the fridge or warmed up!

Apple Pie Overnight Oats

Ingredients

    For the apple filling:
  • 1 small-medium apple, chopped
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/8 tsp. ginger
  • 1 tbsp. maple syrup
  • Pinch of salt
  • For the oats:
  • 1/2 c. old fashioned or quick oats
  • 3/4 cups oat milk, or other plant based or dairy milk
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/8 tsp. all spice
  • 1 tsp. chia seeds
  • 1 tsp. honey
  • Optional: dried apples or crushed walnuts, for topping

Instructions

    For the apple filling:
  1. Add apples, spices, maple syrup and salt to a small sauce pan. Stir to combine.
  2. Heat over low heat. Cook about 8-10 minutes, or until apples are tender.
  3. Increase heat to medium and cook an additional 3-4 minutes to allow mixture to thicken.
  4. Once thickened, remove from heat and set aside to cool.
  5. For the oats:
  6. In a small mixing bowl, add the oats, milk, vanilla, spices, chia seeds, and honey. Stir to combine.
  7. Add a layer of the mixture to the bottom of a jar with lid.
  8. Once cooled, spoon a little apple mixture on top of the oat layer.
  9. Continue layering until you reach the top of the jar. Then, top with dried apples or walnuts, if desired.
  10. Cover jar and place in refrigerator overnight.
  11. Enjoy oats cold or warmed up.

While this recipe isn’t totally devoid of sugar, it’s definitely a better way to enjoy the taste of apple pie.  Use your favorite apple variety to make the filling.  The filling even works on top of a warm bowl of oatmeal or spooned over French toast!
