Sweet and Savory Mini Pancake Stacks

As a content creator, you're constantly trying to think up ideas that everyone will enjoy.  Like even though I don't have kids, I still try to include easy, kid-friendly recipes that the littles will love.  I created this recipe with kids in mind.  But as I started making it, I realized that it would suit...well, pretty much everyone!

I mean, who wouldn't love an adorable, fluffy, bite-sized pancake stacked with fruit or bacon?  So not only are these mini pancake stacks a fun breakfast or lunch for the kiddos, they'd be a pretty cute bite to serve for showers and brunches, too!

My husband and I are both fans of Belgian Boys Bite-Sized Pancakes.  I get them through Hungryroot.  We usually enjoy them with a drizzle of syrup and a side of fresh fruit.  But this time around, I thought it would be to pile them up into sweet and savory pancake stacks.

Some of these mini pancake stacks are topped with a dollop of yogurt and fresh fruit (I used blueberries and kiwi slices).  For savory lovers, the other stacks are topped with a piece of bacon (I used plant based bacon) and a drizzle of maple syrup.

Sweet and Savory Mini Pancake Stacks

If you're looking for a fun way to serve pancakes, grab a box of mini pancakes, heat them up, and top them with your favorite sweet and savory toppings! Use your favorite fresh fruits and bacon to top these pancake stacks!

The first thing we need to do to make these adorable little breakfast stacks is cook up our bacon.  I'm using Hooray Foods Plant-Based Bacon from Hungryroot.  It only takes a few minutes to cook up crispy.  Once cooked, I let it cool slightly and then cut into small, bite-sized pieces.

Then, I heat up the pancakes.  The suggested serving size is 9 pancakes so depending on how many people you're serving, you may or may not want to just heat up the whole box.

Once heated and cool enough to touch, we can start placing the pancakes on toothpicks.  I used two pancakes per toothpick.

Now comes the fun part - topping them!  Half of the pancakes were topped with yogurt and fruit.  The other half were topped with bacon and drizzled with syrup.  Once topped serve immediately.

Ingredients
  

  • Frozen mini pancakes
  • Cooked bacon cut into bite-sized pieces
  • Maple syrup
  • Kiwi slices
  • Blueberries
  • Vanilla yogurt
  • Toothpicks

Instructions
 

  • Prepare pancakes according to package. Once cool enough to touch, place two pancakes onto a toothpick.
  • Top with sweet and savory toppings of your choice. Bacon and maple syrup or fresh fruit and vanilla yogurt.
  • Serve immediately.
