St. Patrick's Day celebrations in our home are pretty simple. It's just the two of us and a corned beef brisket that's slow cooked all day before being piled high onto Reuben sandwiches for dinner. We usually end up with leftover corned beef. While it's typically turned into corned beef hash or another loaded sandwich the day after our St. Patrick's Day celebration, I decided to turn this year's leftovers into a surprising addition to one of my favorite easy dinners - fried rice.

Tender corned beef is diced and warmed in a hot pan. When cooked alongside simple veggies and spicy kimchi, it adds a salty, rich flavor to fried rice that's completely unexpected. The entire dish comes together easily - especially if you're using leftover rice, as well - and it's a delicious way to transform leftover corned beef into a whole new meal.

If you've never added kimchi to fried rice before, you're seriously missing out! This fermented cabbage dish is full of bold, tangy, and spicy flavors. Kimchi is typically eaten straight out of the jar as a side dish, served with savory pancakes, stirred into soups, paired with meats, and mixed into fried rice. Adding kimchi to this corned beef fried rice adds an extra dose of flavor in every bite.

Here's the thing that I really love about fried rice - it's totally customizable. It's one of those perfect "clean out the fridge" type of dishes and a great way to use up leftovers. Everything cooks together in one pan letting the flavors mix and mingle while the rice gets that slightly crispy edge to it. Plus, toppings are just as customizable as the dish itself - add some chopped scallions, a sprinkle of sesame seeds, or a drizzle of chili crisp.

Let's get this dish started by heating olive oil in a large pan or wok over medium heat. Add minced garlic and sauté just until fragrant, about 1 minute. Then, add the kimchi (don't drain the juices) and cook 2-3 minutes just until slightly caramelized. Stir in the corned beef and cook until it's warmed through.

Next, we're going to add the rice and soy sauce. Toss everything together to combine. Push the mixed rice to one side of the pan and add the beaten eggs. Scramble and, once cooked, fold them into the rice.

Stir in the peas and green onions.

Once the veggies are warmed through, serve the fried rice with sesame seeds, extra chopped scallions, or a drizzle of chili crisp.

Ingredients
  

  • 2 garlic cloves minced or grated
  • 2 tsp. olive oil
  • 1 cup chopped leftover cooked corned beef
  • 2 cups cooked and chilled rice
  • 2 tsp. low sodium soy sauce or coconut aminos
  • 3/4 cup kimchi
  • 2 large eggs
  • 1/2 cup frozen peas
  • 2 green onions chopped
  • Optional: sesame seeds chopped scallions, chili crisp

Instructions
 

  • Heat olive oil in a large pan, or wok, over medium heat.

  • Push rice to one side of the pan and add beaten eggs.
  • Scramble until set. Then, fold into the rice.
  • Stir in peas and green onions. Once warmed through, serve fried rice.
  • If desired top with sesame seeds, extra chopped scallions, or a drizzle of chili crisp.
