Asian Coleslaw and Radish Salad

If you’re looking for a summer salad full of crunchy texture and bold flavor, try this easy Asian Coleslaw and Radish Salad made with just a handful of fresh ingredients!

Ingredients

  • 1 - 14 oz. bag coleslaw mix
  • 2-3 radishes julienned
  • 1 mini cucumber julienned
  • 1/4 cup coconut aminos or low sodium soy sauce
  • 1 small lime juiced
  • 1 clove garlic minced
  • 2 tbsps. honey
  • 1 tsp. rice vinegar or apple cider vinegar
  • 1 tsp. ground ginger
  • Optional: chopped scallions sesame seeds, crushed peanuts, chili oil

Instructions

  • Add coleslaw mix, radishes, and cucumber to a large mixing bowl. Toss to combine.
  • In a small bowl, mix the coconut aminos, lime juice, garlic, honey, vinegar, and ginger together.
  • Pour dressing mixture over the salad and toss to combine.
  • Place salad in a serving bowl. Chill until serving, or serve immediately with toppings such as chopped scallions, sesame seeds, peanuts, or chili oil.

Notes

Using coconut aminos does give this salad the slightest touch of sweetness. Using soy sauce will add more of a umami, salty flavor. The flavor of the coconut aminos balances out the savory flavor of this coleslaw nicely and is recommended for this recipe.
