Asian Coleslaw and Radish Salad

A garden is kind of like a promise that you hope will be fulfilled.  And when you start to see those sprouts emerging from the soil, you know the promise has come to completion.  That's how it feels when those first spring vegetables are planted, like our radishes.  When the tops start to pop through the ground and the slightest hint of radish red can be seen, the excitement begins.

Most of the year, I hardly use radishes in our dishes.  But when they're growing in our garden, I will use them any chance I get!  They're so much better than store bought radishes.  They're extra crunchy with a great snap and zing of flavor!  I'll usually eat them in slices or use them in salads or as a topping for wraps or tacos.

Since it's officially barbecue season, I wanted to use our radishes in a side salad.  Something that would be easy to transport to gatherings, that would stay crunchy, and be full of bold flavor.  So I whipped up an Asian style coleslaw using some of our garden radishes.

Asian Coleslaw and Radish Salad

Obviously if you don't have radishes growing in your garden, you can grab them from the store or farmer's market (how Ina Garten of me to say!).  This salad is so fresh and perfect for summer.  It's sure to be a hit at your next outdoor gathering.

This salad is super easy to throw together!  After julienning radishes and a mini cucumber, place them in a bowl along with the coleslaw mix.  Toss everything together just so it's combined.  Then, make a simple Asian inspired dressing.

The dressing is a simple mix of coconut aminos (used in place of soy sauce), fresh lime juice, garlic, honey, rice vinegar, and ground ginger.  Mix it all together to combine and pour over the salad.  Give the salad a quick toss to combine.

Now, place the salad in a serving bowl.  You can serve it as it or add a variety of toppings such as chopped scallions, sesame seeds, chili oil, or crushed peanuts.

Ingredients
  

  • 1 - 14 oz. bag coleslaw mix
  • 2-3 radishes julienned
  • 1 mini cucumber julienned
  • 1/4 cup coconut aminos or low sodium soy sauce
  • 1 small lime juiced
  • 1 clove garlic minced
  • 2 tbsps. honey
  • 1 tsp. rice vinegar or apple cider vinegar
  • 1 tsp. ground ginger
  • Optional: chopped scallions sesame seeds, crushed peanuts, chili oil

Instructions
 

  • Add coleslaw mix, radishes, and cucumber to a large mixing bowl. Toss to combine.
  • In a small bowl, mix the coconut aminos, lime juice, garlic, honey, vinegar, and ginger together.
  • Pour dressing mixture over the salad and toss to combine.
  • Place salad in a serving bowl. Chill until serving, or serve immediately with toppings such as chopped scallions, sesame seeds, peanuts, or chili oil.

Notes

Using coconut aminos does give this salad the slightest touch of sweetness. Using soy sauce will add more of a umami, salty flavor. The flavor of the coconut aminos balances out the savory flavor of this coleslaw nicely and is recommended for this recipe.

This salad pairs fabulously with grilled meats like pork, chicken, or a teriyaki marinated London broil.  It can be made ahead of time.  Just leave the toppings until you're about ready to serve.  I find that this recipe is even better after sitting for a day in the fridge.
