Ingredients
3slicesbaconchopped
1/2cupsliced chorizochopped
1large garlic cloveminced
1/2cupred onionchopped
1tbsp.olive oil
1whole egg + 1 egg whitebeaten
Salt and pepperto taste
1 - 8.5oz.jasmine rice microwavable packagecooked
1 1/2tbsp.low sodium soy sauce
Optional: sesame seedschopped scallions, to garnish
Instructions
Heat a wok or large skillet over medium heat.
Add bacon and cook until crispy, about 8 minutes. Remove from skillet and drain on a paper towel.
Lightly wipe out the pan and add the chorizo, garlic, and onion. Cook until garlic is fragrant and onion has softened. Remove from heat and set aside on another paper towel.
Wipe out the pan completely and add the olive oil.
Lower the heat and add the eggs. Season with salt and pepper and scramble until set, about 3-5 minutes.
Add the rice to the skillet. Stir to break it up.
Add the chorizo, garlic, onion, and bacon back into the pan.
Stir in the soy sauce until completely distributed.
Serve immediately with sesame seeds and chopped scallions on top, if desired.
