Chicken Sausage Pizza Soup

- 2 tbsps. olive oil
- 1 cup red onion chopped
- 3 cloves garlic minced
- 2 small-medium bell peppers or 1 large bell pepper chopped
- 2 cups mushrooms sliced thin
- 1 - 11 oz. package fully cooked chicken sausage cut into 1/4" rounds
- 18 oz. crushed tomatoes
- 32 oz. chicken broth or vegetable broth
- 1 tbsp. oregano
- 1/2 tbsp. basil
- Crushed red pepper
- Salt and pepper to taste
- Shredded Parmesan cheese
Heat olive oil in a large pot or Dutch oven over medium-high heat.
Add garlic and onion and cook 3-4 minutes, or until fragrant and translucent.
Lower heat to medium and stir in peppers and mushrooms. Cook 2-3 minutes, or until veggies begin to soften.
Add sausage and brown 2-3 minutes.
Carefully pour in crushed tomatoes and broth. Stir in oregano, basil, crushed red pepper. Season with salt and pepper.
Bring pot to a boil, then reduce to a simmer. Cook at least 30 minutes.
Top with a generous sprinkle of Parmesan. Serve with garlic bread or breadsticks, if desired.
