Crunchy Asian-Inspired Cucumber and Crab Salad

This Crunchy Asian-Inspired Cucumber and Crab Salad is a refreshing summer dish made with thin slices of fresh cucumber, shaved carrots, radishes, avocado, scallions, and crab meat in a soy sauce based dressing.

Equipment

  • 1 small mixing bowl
  • 1 large mixing bowl

Ingredients

For the dressing:

  • 2 tbsps. low sodium soy sauce
  • 1 tbsp. rice vinegar or white vinegar
  • 1 small lime juiced
  • 1 tsp. honey
  • 1/4 tsp. ground ginger
  • Sriracha if desired

For the salad:

  • 1 large cucumber cut into thin half-moons
  • 1 avocado diced
  • 1/2 cup shredded carrots
  • 1/2 cup radishes julienned
  • 6 oz. can lump crab meat drained
  • 1/4 cup scallions, or red onion chopped
  • Optional: sesame seeds, Sriracha

Instructions

  • Whisk dressing ingredients together in a small bowl.
  • In a large bowl, add the cucumbers, avocado, carrots, radishes, crab meat, and scallions. Pour the dressing over the salad and toss to combine.
  • Place salad in a serving dish. If desired, serve with sesame seeds on top and extra Sriracha.
