I literally cannot wait for fresh garden cucumbers again! Every day, I start my morning outside. I do a little walk around the yard and take a look at everything that's sprouting in our garden. The cucumbers we planted are coming up nicely. And hopefully, like last year, I'll have more cucumbers than I know what to do with them. We had so many!
It was like every time I went outside last summer, I'd find at least one cucumber hidden in the vines. I made a ton of pickles, relish, and of course, fresh salads with them. With the weather finally seeming to warm up here in Jersey, I've been craving refreshing foods like cucumbers. And fresh cucumber salad has totally been on the forefront of my mind!
One combo I kept thinking about making was a cucumber and crab salad. Totally summery! Totally lunch-worthy! And totally simple to make! To keep things budget-friendly, I used a can of lump crab meat to bulk up the salad. Then, I mixed it with fresh slices of cucumber, diced avocado, chopped scallions, julienned radishes, shredded carrots and made an Asian inspired dressing.
Fresh Cucumber and Crab Salad
If you're looking for a refreshing salad to make this summer, this salad definitely fits the vibe of the season! It makes a nice, light lunch or a flavorful side salad. If you're not a fan of crab, try adding some shrimp instead. Vegetarian or vegan? Try adding some tofu or chickpeas!
The first thing we're going to do to start this salad is whip up the dressing. In a small bowl, whisk soy sauce, rice vinegar, lime juice, honey, and dried ginger. I also added a splash of Sriracha because I like a little heat.
Now, add the cucumbers, avocado, scallions (or onions), radishes, carrots, and crab meat to a large mixing bowl.
Pour the dressing over the salad and toss to combine.
Place the salad in a serving dish and, if desired, sprinkle sesame seeds on top. Serve with Sriracha.

Crunchy Asian-Inspired Cucumber and Crab Salad
Equipment
- 1 small mixing bowl
- 1 large mixing bowl
Ingredients
For the dressing:
- 2 tbsps. low sodium soy sauce
- 1 tbsp. rice vinegar or white vinegar
- 1 small lime juiced
- 1 tsp. honey
- 1/4 tsp. ground ginger
- Sriracha if desired
For the salad:
- 1 large cucumber cut into thin half-moons
- 1 avocado diced
- 1/2 cup shredded carrots
- 1/2 cup radishes julienned
- 6 oz. can lump crab meat drained
- 1/4 cup scallions, or red onion chopped
- Optional: sesame seeds, Sriracha
Instructions
- Whisk dressing ingredients together in a small bowl.
- In a large bowl, add the cucumbers, avocado, carrots, radishes, crab meat, and scallions. Pour the dressing over the salad and toss to combine.
- Place salad in a serving dish. If desired, serve with sesame seeds on top and extra Sriracha.
Store this salad in an airtight container in the fridge for about 3-4 days. It's best when enjoyed fresh though. This cucumber salad definitely hit the spot and satisfied my craving! In fact, after I made it, I had to hurry up and put the rest of the container away. I kept picking at it. It's so good! I can't wait until I can make this salad with fresh cucumbers from our garden!
