Preheat oven to 350 degrees. Prepare a baking sheet with foil and non-stick cooking spray.
Add chopped apples to a small bowl and sprinkle brown sugar on top. Stir.
Open tube of crescent rolls and unroll and separate each crescent roll.
Spoon a little of the apple filling onto the large end of each crescent roll.
Add one caramel to each roll. It helps to cut each caramel in half first.
Carefully roll each crescent roll up and place each roll on the baking sheet.
In another small bowl, melt butter. Then, stir in cinnamon and sugar.
Brush butter mixture on top of each crescent roll. Sprinkle a little more sugar on top, if desired.
Bake for 10-12 minutes, or until golden brown.
