Easy Chicken Fajita Casserole

This Easy Chicken Fajita Casserole is a one dish meal that’s perfect for busy weeknights, Taco Tuesday, or any day of the week! It has all of the flavor of chicken fajitas without the mess!

Ingredients

  • 1 cup brown rice
  • 2 cups chicken broth
  • 4 boneless skinless chicken breasts, trimmed and cut into large chunks
  • 2 tbsp. fajita seasoning or 1 fajita seasoning packet
  • 1 1/2 cups bell pepper cut into strips
  • 1 1/2 cups onions cut into strips
  • 16 oz. jar salsa
  • 2 cups shredded cheddar cheese
  • Suggested toppings: sour cream chopped scallions, cilantro, lime wedges, hot sauce

Instructions

  • Preheat the oven to 375 degrees. Grease a 9"x13" baking dish with cooking spray.
  • Add the rice to the baking dish, spreading it out evenly.  Pour in the chicken broth.
  • In a large bowl, add the chicken, fajita seasoning, bell peppers, onions, and salsa.  Stir to combine.
  • Layer the mixture on top of the rice.
  • Cover casserole with foil and bake for 55 minutes. Sprinkle cheese on top and cook another 5 minutes, or until cheese is melted.
  • Serve casserole with sour cream, chopped scallions, cilantro, lime wedges, or hot sauce, if desired.
