It's crazy how the low 80's feel like a breath of fresh air compared to the sweltering 90's we've experienced just about every week this summer. Have I turned the oven on much? Nope! Am I embracing every single day that I can turn the oven on again? Sure am!
As we creep closer to the beginning of fall, I find myself digging out my favorite slow cooker recipes, pasta dishes, and casseroles. And I'm starting the return of "turn the oven back on" season with this super easy and delicious chicken fajita casserole!
I love a good fajita night, but I don't love cleaning up after a good fajita night. Cause you know it's not just a sizzling plate of meat and veggies. You've got to have your warm tortillas and all of those extras to put on top!
This dish has all of the goodness of chicken fajitas without having to clean up a thousand dishes afterwards. I call that a "winner, winner, chicken fajita dinner!"
Easy Chicken Fajita Casserole
This fajita casserole recipe is made with boneless, skinless chicken breasts, brown rice, chicken broth, bell peppers, onions, fajita seasoning, salsa, and shredded cheddar cheese. It's an easy one dish meal for busy weeknights!
The first thing we're going to do is preheat the oven to 375 degrees and spray a glass baking dish with cooking spray. Then, add the brown rice and broth into the dish.
Now, we're going to add the chicken, peppers, onions, fajita seasoning, and salsa to a mixing bowl. Stir it all together. Then, add it on top of the rice and chicken broth and cook it in the oven for about an hour.
Right before serving, we're going to add cheese on top and pop the casserole back into the oven for five or so minutes.
Once the rice is fully cooked and the cheese is bubbling, take the casserole out of the oven and serve it with your favorite fajita toppings!
Easy Chicken Fajita Casserole
Ingredients
- 1 cup brown rice
- 2 cups chicken broth
- 4 boneless skinless chicken breasts, trimmed and cut into large chunks
- 2 tbsp. fajita seasoning or 1 fajita seasoning packet
- 1 1/2 cups bell pepper cut into strips
- 1 1/2 cups onions cut into strips
- 16 oz. jar salsa
- 2 cups shredded cheddar cheese
- Suggested toppings: sour cream chopped scallions, cilantro, lime wedges, hot sauce
Instructions
- Preheat the oven to 375 degrees. Grease a 9"x13" baking dish with cooking spray.
- Add the rice to the baking dish, spreading it out evenly. Pour in the chicken broth.
- In a large bowl, add the chicken, fajita seasoning, bell peppers, onions, and salsa. Stir to combine.
- Layer the mixture on top of the rice.
- Cover casserole with foil and bake for 55 minutes. Sprinkle cheese on top and cook another 5 minutes, or until cheese is melted.
- Serve casserole with sour cream, chopped scallions, cilantro, lime wedges, or hot sauce, if desired.
This chicken fajita casserole is a great way to switch things up on Taco Tuesday. But it's delicious any day of the week when you want a quick dinner that's full of zesty, fajita flavor!
