These Easy Mahi Mahi Tostadas are fresh and flavorful, made with taco seasoned mahi mahi fish filets, lettuce, refried beans, and topped with fresh salsa and sour cream.

Ingredients
2small6" whole wheat tortillas
1tbsp.extra virgin olive oil
2mahi mahi filets
1tbsp.taco seasoning
1/2cuprefried red beans
1cupRomaine lettucechopped
Fresh salsa
Sour cream
Instructions
Over a low flame, use tongs to toast each side of the tortillas until crispy and slightly charred. Set aside.
Pat the mahi mahi dry and season with taco seasoning.
In a medium skillet, heat olive oil over medium-high heat. Then, place mahi mahi in the skillet.
Cook fish for 3-4 minutes. Flip and cook for 2-3 minutes, or until cooked through and flaky.
While fish is cooking, heat refried beans in the microwave in a covered microwave-safe bowl for 2-3 minutes, or until warm.
Spread each tortilla with the beans.
Then, layer the tortillas with lettuce and mahi mahi.
