Ingredients
3-4green tomatoessliced into -1/4-1/2 inch rounds
1large egg
1/2cupflour
1cuppanko bread crumbs
1/2tsp.paprika
1/4tsp.garlic powder
1/4tsp.onion powder
1/4tsp.oregano
Salt and pepperto taste

Instructions
Preheat oven to 425 degrees. Line a large baking sheet with parchment paper.
Sprinkle tomatoes with salt and let sit 20-30 minutes. Then, quickly rinse and pat dry.
In a small bowl, add egg and beat. Place flour in small, shallow dish. Place panko and spices in another dish. Combine panko and seasonings.
Dredge tomatoes in flour, shaking off excess. Dip into egg and follow with panko mixture. Press to coat each tomato slice.
Place tomatoes onto prepared baking sheet and spray each side with cooking spray.
Bake tomatoes 30 minutes, flipping halfway through. Tomatoes will be golden brown when finished.
Serve immediately with your favorite dipping sauce.
