Easy Oven Fried Green Tomatoes

These Easy Oven Fried Green Tomatoes are a healthier take on this classic Southern appetizer. They’re made with tangy, fresh green tomatoes and a crispy, seasoned coating.

Ingredients

  • 3-4 green tomatoes sliced into -1/4-1/2 inch rounds
  • 1 large egg
  • 1/2 cup flour
  • 1 cup panko bread crumbs
  • 1/2 tsp. paprika
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/4 tsp. oregano
  • Salt and pepper to taste
  • Cooking spray

Instructions

  • Preheat oven to 425 degrees. Line a large baking sheet with parchment paper.
  • Sprinkle tomatoes with salt and let sit 20-30 minutes. Then, quickly rinse and pat dry.
  • In a small bowl, add egg and beat. Place flour in small, shallow dish. Place panko and spices in another dish. Combine panko and seasonings.
  • Dredge tomatoes in flour, shaking off excess. Dip into egg and follow with panko mixture. Press to coat each tomato slice.
  • Place tomatoes onto prepared baking sheet and spray each side with cooking spray.
  • Bake tomatoes 30 minutes, flipping halfway through. Tomatoes will be golden brown when finished.
  • Serve immediately with your favorite dipping sauce.
