This Easy Slow Cooker Turkey Chili is hearty, healthy, and flavorful. It’s made with lean ground turkey, classic chili ingredients, as well as some unexpected additions like mushrooms and roasted red pepper soup!

Ingredients
1poundground turkey
2garlic clovesminced
1cupbaby bella mushroomschopped
1small onioncut into chunks
1tbsp.ancho chili powder
1/2tsp.cumin
1/2tsp.crushed red pepper
1 - 15oz.can 365 by Whole Foods Bean Triokidney, pinto, and black beans, rinsed and drained
1large green bell peppercut into chunks
1 - 28-oz.can crushed tomatoes
1cupRoasted Red Pepper soup
Salt and pepperto taste
Instructions
In a skillet over medium heat, brown the ground turkey. Drain and place back onto heat.
Add garlic and mushrooms to skillet and cook until garlic becomes fragrant and mushrooms begin to soften. Remove from heat and place in slow cooker.
Add peppers, onion, beans, crushed tomatoes, red pepper soup, and spices. Season with salt and pepper.
Stir to combine. Set slow cooker to low and cook for 8 hours.
Serve with chopped scallions on top and a side of corn bread.
