Easy Slow Cooker Turkey Chili

This Easy Slow Cooker Turkey Chili is hearty, healthy, and flavorful.  It's made with lean ground turkey, classic chili ingredients, as well as some unexpected additions like mushrooms and roasted red pepper soup!

As you know, I have been trying to lose a few pounds.  I have been exercising almost every night (and feeling pretty good about it!), as well as making some changes to my diet.  My husband came home from work one night and told me about a diet his coworker went on called The Fast Metabolism Diet.  His coworker, his coworker's wife, and mother-in-law all lost a significant amount of weight on this diet in about four months.  I was skeptical about it.  He just told me, "Read the book."  So I am.

I kind of get it.  The main premise of this diet is to keep your body confused so it has to work harder.  The diet works in phases.  Phase 1 is when you eat carbs.  I almost quit hearing that since I've been eating low carb.  Then, I read on.  It's not the carbs we all think of like pasta, pasta, and more pasta.  It's more along the lines of sprouted grains and quinoa.  I can hang with that for two days out of the week.

Phase 2 will probably become my favorite phase - protein.  And that's where this recipe comes in.  I am an egg eater, a meat eater, a seafood eater.  I am a total carnivore and I'll get two days of that!  But before I move on to this chili recipe, let me tell you about Phase 3.

Phase 3 is where you introduce healthy fats (think avocados and nuts) to the week along with a combination of carbs and protein.  The only downside to this diet is that for 28 days there's no dairy (♥ you, miss you, cheese), caffeine (I won't die without it), or alcohol (wine is a grape though!).  I'm determined to see if this diet really works as well as I've heard and read.

Easy Slow Cooker Turkey Chili

One of the things I love about the recipes in this book is that they're easy to make and sound pretty delicious.  As soon as I read "chili" in the recipe list, I automatically asked my husband if he wanted chili for dinner one night.  Now is the time of year that I start getting excited for hearty meals, like chili, cooked in the slow cooker. This turkey chili recipe was a total win!

The first thing I did was brown the ground turkey in a skillet.  Once it was cooked, I drained the pan and added minced garlic and chopped mushrooms.  The mixture was cooked until the garlic became fragrant and the mushrooms started to soften.  Then, I added everything to my slow cooker.

Next, I added chopped bell pepper, chopped onion, a mix of beans, crushed tomatoes, and a little red pepper soup.  Yes, soup!  It amps up the flavor.  Mix it all up and then add your spices - cumin, ancho chili powder, and crushed red pepper.

Give everything one last stir, then pop the lid on the slow cooker and let the chili cook on low for 8 hours.  The longer it cooks, the better and more flavorful it will be!

Once the chili is done cooking, spoon it into bowls and top with chopped green onions (or cheese and sour cream) and serve with a side of cornbread!

Ingredients
  

  • 1 pound ground turkey
  • 2 garlic cloves minced
  • 1 cup baby bella mushrooms chopped
  • 1 small onion cut into chunks
  • 1 tbsp. ancho chili powder
  • 1/2 tsp. cumin
  • 1/2 tsp. crushed red pepper
  • 1 - 15 oz. can 365 by Whole Foods Bean Trio kidney, pinto, and black beans, rinsed and drained
  • 1 large green bell pepper cut into chunks
  • 1 - 28- oz. can crushed tomatoes
  • 1 cup Roasted Red Pepper soup
  • Salt and pepper to taste

Instructions
 

  • In a skillet over medium heat, brown the ground turkey. Drain and place back onto heat.
  • Add garlic and mushrooms to skillet and cook until garlic becomes fragrant and mushrooms begin to soften. Remove from heat and place in slow cooker.
  • Add peppers, onion, beans, crushed tomatoes, red pepper soup, and spices. Season with salt and pepper.
  • Stir to combine. Set slow cooker to low and cook for 8 hours.
  • Serve with chopped scallions on top and a side of corn bread.

This recipe is loaded with so much stuff that I don't even miss adding cheese on top (sort of a lie)!  But one thing is for sure - this chili is guaranteed to leave you full and satisfied.
