Easy Smoked Salmon Poke Bowl

Make a Hawaiian inspired Easy Smoked Salmon Poke Bowl with protein packed cold-smoked salmon, a rainbow of veggies, and a simple poke sauce.

Ingredients

  • 1 Organic Seasoned Jasmine Rice pouch
  • 1 package Smoked Poké Style Salmon
  • 2-3 tbsp. low sodium soy sauce or coconut aminos
  • 2 tsp. rice vinegar or apple cider vinegar
  • 1/2 tbsp. sesame oil
  • 1 tsp. honey
  • 1 tsp. fresh ginger peeled and grated
  • Splash of Sriracha
  • Salt to taste
  • 1/4 cup Shelled Edamame
  • 1/2 avocado sliced thin
  • 1/2 cup Crunchy Veggie Slaw
  • 1 mini cucumber sliced thin in half moons
  • Sesame seeds to garnish

Instructions

  • Tear corner of rice package to vent.  Heat in microwave 90 seconds.  Carefully remove from microwave. Divide between two bowls.
  • Place Smoked Poké Style Salmon in a mixing bowl.  In another bowl, stir soy sauce, vinegar, sesame oil, ginger, Sriracha, and salt.  Pour sauce over salmon. Toss.
  • Divide the salmon between the two bowls.
  • Then, add the edamame, avocado, Crunchy Veggie Slaw, and sliced cucumber between the two bowls. 
  • Garnish with sesame seeds and serve immediately.
