Once upon a time, I wasn't the biggest fan of salmon. I had tried it a few different ways and each way was not appealing to me. Then, I signed up for Hungryroot and received a package of Hot Smoked Roasted Salmon in my first box.

These days, salmon ends up on our weekly menu at least once a month! We've had it in salads, baked, marinated, and even in burger form. But up until now, I never had it poke style. Poke bowls are a Hawaiian dish traditionally made with tuna, but I've seen many poke bowl recipes made with salmon as well.

This salmon poke sushi bowl recipe is a quick, almost no-cook meal that's great for busy weekdays and hot summer evenings! All you really need to do is heat the rice, then dress it up with salmon, veggies, and a simple poke sauce!
Easy Smoked Salmon Poke Bowl
This recipe starts with a pouch of Hungryroot's Organic Seasoned Jasmine Rice. Then, it's topped with the salmon, veggie slaw, edamame, avocado, and cucumber. Finally, the bowls are drizzled with a simple poke sauce and garnish with sesame seeds and chopped green onions.
This poke bowl is super easy to make! First, we need to microwave the package of rice and divide it between two bowls.
Now, we're going to place the smoked poke salmon in a small bowl and mix it with a sauce made with soy sauce, vinegar, sesame oil, fresh ginger, Sriracha, and salt.
Divide the salmon between the two bowls filled with rice. Then, add the edamame, avocado, Crunchy Veggie Slaw, and sliced cucumber. And that's it! Garnish the poke bowls with sesame seeds and serve immediately.
Easy Smoked Salmon Poke Bowl
Ingredients
- 1 Organic Seasoned Jasmine Rice pouch
- 1 package Smoked Poké Style Salmon
- 2-3 tbsp. low sodium soy sauce or coconut aminos
- 2 tsp. rice vinegar or apple cider vinegar
- 1/2 tbsp. sesame oil
- 1 tsp. honey
- 1 tsp. fresh ginger peeled and grated
- Splash of Sriracha
- Salt to taste
- 1/4 cup Shelled Edamame
- 1/2 avocado sliced thin
- 1/2 cup Crunchy Veggie Slaw
- 1 mini cucumber sliced thin in half moons
- Sesame seeds to garnish
Instructions
- Tear corner of rice package to vent. Heat in microwave 90 seconds. Carefully remove from microwave. Divide between two bowls.
- Place Smoked Poké Style Salmon in a mixing bowl. In another bowl, stir soy sauce, vinegar, sesame oil, ginger, Sriracha, and salt. Pour sauce over salmon. Toss.
- Divide the salmon between the two bowls.
- Then, add the edamame, avocado, Crunchy Veggie Slaw, and sliced cucumber between the two bowls.
- Garnish with sesame seeds and serve immediately.

What is cold-smoked salmon?
In case you're wondering, Hungryroot's salmon is cold-smoked. While it's not cooked, it's cured in salt and then slowly smoked (but from a distance unlike hot-smoked salmon).
Cold-smoked salmon has the texture of raw fish, so it's not flaky like cooked salmon. Cold-smoked salmon tastes saltier than hot-smoked salmon, but still has a smokey flavor to it.
It's also best eaten cold in dishes like salads and grain bowls. It can be refrigerated up to one week, but I would recommend eating leftovers within a day.
