Easy Vegan Breakfast Quesadilla Hack

This Easy Vegan Breakfast Quesadilla Hack takes minutes to make! Just top plant-based eggs with a tortilla and cheese, cook, fold, and serve with fresh salsa.

Ingredients

  • 1 tbsp. olive oil or plant-based butter
  • 1/2 cup JUST Egg Plant-Based Liquid Eggs
  • 1 Organic White Flour Tortilla
  • 1 Mature Vegan Cheddar Slice
  • Salt and pepper to taste
  • Optional: fresh salsa for topping

Instructions

  • Add olive oil, or plant-based butter, in a pan over medium heat. If using butter, let it melt completely.
  • Then, add the plant-based eggs to the pan and season with salt and pepper.
  • Place the tortilla on top of the eggs. Allow the eggs to cook for 1-2 minutes, or until set.
  • Use a spatula to carefully flip the tortilla over. Then, add the cheese slice on top.
  • Fold tortilla over and remove it from pan. If tortilla isn't crispy and golden brown and cheese hasn't melted yet, allow it to sit for another 1-2 minutes.
  • Cut the tortilla in half and serve with fresh salsa on top, if desired.
