Ingredients
1tbsp.olive oilor plant-based butter
1/2cupJUST Egg Plant-Based Liquid Eggs
1Organic White Flour Tortilla
1Mature Vegan Cheddar Slice
Salt and pepperto taste
Optional: fresh salsafor topping
Instructions
Add olive oil, or plant-based butter, in a pan over medium heat. If using butter, let it melt completely.
Then, add the plant-based eggs to the pan and season with salt and pepper.
Place the tortilla on top of the eggs. Allow the eggs to cook for 1-2 minutes, or until set.
Use a spatula to carefully flip the tortilla over. Then, add the cheese slice on top.
Fold tortilla over and remove it from pan. If tortilla isn't crispy and golden brown and cheese hasn't melted yet, allow it to sit for another 1-2 minutes.
Cut the tortilla in half and serve with fresh salsa on top, if desired.
