Ingredients
For the cream cheese frosting:
1/2cupbuttersoftened to room temperature
8oz.cream cheese
1tsp.vanilla extract
4cupspowdered sugar
For the blueberry topping:
2tbsps.cornstarch
1/2cupsugar
1pintfresh blueberriesrinsed and drained
1/2cupwater
1tsp.lemon juice
For the dessert pizza:
1store bought pizza doughbrought to room temperature and cut into two pieces
Extra virgin olive oil
1/2cupcream cheese frosting
1cupblueberry topping
Optional: powdered sugarslivered almonds, lemon zest, fresh chopped mint
Instructions
For the cream cheese frosting:
Beat the butter and cream cheese together until smooth and combined.
Mix in the vanilla and gradually add in the powdered sugar until you've reached a thick, frosting consistency.
Store the frosting in the fridge until time to use.
For the blueberries:
In a saucepan, combine cornstarch, sugar, blueberries, and water. Cook over medium heat until mixture boils.
Remove the mixture from the heat and stir in the lemon juice.
Allow the mixture to cool before use or store in the fridge.
For the dessert pizza:
Preheat the grill to medium-high heat.
Divide dough into two equal pieces. Stretch dough and brush each side with olive oil.
Place the dough on the grill and cook for about 2-3 minutes, or until the dough begins to bubble and you have grill marks on the bottom.
Flip the dough and continue cooking the other side. When the dough is fully cooked, remove from heat.
Spread each piece of dough with the cream cheese frosting. Then, top with the blueberry mixture.
Finish each pizza with powdered sugar, slivered almonds, lemon zest, or fresh chopped mint, if desired.
Then, cut the pizza into slices and serve immediately.
Notes
Store extra blueberry topping in a container in the fridge. Use it to top French toast or ice cream!
