You know those memes on Facebook that give you a silly name based on your birthday or initials? A couple months ago, I shared a "What's Your New Jersey Name?" meme. One of my friends ended up with the name "Blueberry Pizza." After commenting with her Jersey name, she also added that blueberry pizza was something that I needed to make.
So here we are a couple months later and it's actually National Blueberry Month. A perfect time to make blueberry pizza a reality! And keeping with our slight Jersey theme, did you know that Hammonton, New Jersey is known as the "Blueberry Capital of the World?"
I'm pretty sure New Jersey could be the "Pizza Capital of the World," too. But it's not! It's actually a town in Pennsylvania. Old Forge, to be exact. Based on the amount of pizza we make, I'm sure that my family alone could improve NJ's standing!
We've definitely made all kinds of pizza creations, but I've only ever made one dessert pizza. And let me tell you, it was delicious! Dessert pizza definitely needs to become more of an occurrence. Just like regular pizza, it starts with your standard pizza dough but is topped with sweet dessert toppings.
Grilled Blueberry Dessert Pizza
This Grilled Blueberry Dessert Pizza starts with grilled pizza dough. Then, the dough is spread with a sweet cream cheese frosting and topped with fresh blueberry pie filling, a sprinkle of powdered sugar, lemon zest, and some fresh mint. It's a delicious way to end a summer pizza night!
You can skip the prep work by using a container of cream cheese frosting and premade blueberry pie filling. But I'm keeping things extra fresh by making my own. The cream cheese frosting I used is made with dairy-free ingredients. I used fresh blueberries for the topping, but frozen can be used instead.
I already had some vegan cream cheese frosting in the freezer. So I just had to prep the blueberry topping. To do this, I added cornstarch, sugar, a pint of fresh blueberries, and water to a saucepan and cooked it over medium heat.
Once the mixture came to a boil, I removed it from the heat and stirred in the lemon juice. While the mixture cools, it gets thicker so just set it aside until it's ready to use, or store it in the fridge.
Now we can start the pizza! Make sure your pizza dough is at room temperature. It'll be easier to stretch. Cut it into two pieces and stretch them out. They don't have to look perfect. Then, brush each side with olive oil.
Place the dough on the grill over medium-high heat and cook it for a few minutes, or until you start to see grill marks on the bottom of the dough and the top of the dough starts to bubble. Flip the dough and finish cooking it.
Now we can start building our pizza. Spread it with the cream cheese frosting and top it with the blueberry mixture. If desired, add a sprinkle of powdered sugar, slivered almonds, some lemon zest, and fresh mint. Then, cut each pizza into slices and serve immediately!
Grilled Blueberry Dessert Pizza
Ingredients
For the cream cheese frosting:
- 1/2 cup butter softened to room temperature
- 8 oz. cream cheese
- 1 tsp. vanilla extract
- 4 cups powdered sugar
For the blueberry topping:
- 2 tbsps. cornstarch
- 1/2 cup sugar
- 1 pint fresh blueberries rinsed and drained
- 1/2 cup water
- 1 tsp. lemon juice
For the dessert pizza:
- 1 store bought pizza dough brought to room temperature and cut into two pieces
- Extra virgin olive oil
- 1/2 cup cream cheese frosting
- 1 cup blueberry topping
- Optional: powdered sugar slivered almonds, lemon zest, fresh chopped mint
Instructions
For the cream cheese frosting:
- Beat the butter and cream cheese together until smooth and combined.
- Mix in the vanilla and gradually add in the powdered sugar until you've reached a thick, frosting consistency.
- Store the frosting in the fridge until time to use.
For the blueberries:
- In a saucepan, combine cornstarch, sugar, blueberries, and water. Cook over medium heat until mixture boils.
- Remove the mixture from the heat and stir in the lemon juice.
- Allow the mixture to cool before use or store in the fridge.
For the dessert pizza:
- Preheat the grill to medium-high heat.
- Divide dough into two equal pieces. Stretch dough and brush each side with olive oil.
- Place the dough on the grill and cook for about 2-3 minutes, or until the dough begins to bubble and you have grill marks on the bottom.
- Flip the dough and continue cooking the other side. When the dough is fully cooked, remove from heat.
- Spread each piece of dough with the cream cheese frosting. Then, top with the blueberry mixture.
- Finish each pizza with powdered sugar, slivered almonds, lemon zest, or fresh chopped mint, if desired.
- Then, cut the pizza into slices and serve immediately.
Notes
So. Freaking. Good! I definitely recommended enjoying this pizza the same day it's made. But if you need to warm it up, reheat it on the grill for a few minutes. Take this dessert pizza up a notch with a scoop of vanilla ice cream on top!
