Homemade Avocado and Chickpea Burgers

- 1 medium avocado cut into chunks
- 1 - 16 oz. can chickpeas drained and rinsed
- 2 cloves of garlic minced
- 1 large egg
- 1 tbsp. olive oil vegetable oil, or coconut oil
- 2 cups plain old fashioned oatmeal divided
- 1 tsp. nutritional yeast
- Salt and pepper to taste
In a food processor, add avocado chunks, chickpeas, garlic, egg, oil, and 1 cup of oatmeal. Process until well-combined and mostly smooth.
Transfer mixture to a large mixing bowl. Add the other cup of oatmeal, nutritional yeast, and salt and pepper.
Mix well until combined and form the mixture into patties.
Cook the burgers on the grill or in an oiled skillet for about 3-4 minutes on each side, or until warmed through and golden brown on the outside.
Serve with toasted buns and your favorite burger toppings!
