Homemade Avocado and Chickpea Burgers

Love veggie burgers and want to make them at home? These Avocado and Chickpea Veggie Burgers are an easy, meatless recipe!

Ingredients

  • 1 medium avocado cut into chunks
  • 1 - 16 oz. can chickpeas drained and rinsed
  • 2 cloves of garlic minced
  • 1 large egg
  • 1 tbsp. olive oil vegetable oil, or coconut oil
  • 2 cups plain old fashioned oatmeal divided
  • 1 tsp. nutritional yeast
  • Salt and pepper to taste

Instructions

  • In a food processor, add avocado chunks, chickpeas, garlic, egg, oil, and 1 cup of oatmeal. Process until well-combined and mostly smooth.
  • Transfer mixture to a large mixing bowl. Add the other cup of oatmeal, nutritional yeast, and salt and pepper.
  • Mix well until combined and form the mixture into patties.
  • Cook the burgers on the grill or in an oiled skillet for about 3-4 minutes on each side, or until warmed through and golden brown on the outside.
  • Serve with toasted buns and your favorite burger toppings!
