Even though I'm a born carnivore, I spent a year and a half consuming a vegetarian diet while I was in college. It was difficult at first (like going out to restaurants with friends and being the only one substituting tofu for chicken), but I eased myself into creating new, meatless meals to satisfy my taste buds. I not only felt better, but I dropped a lot of weight ditching meat products too.
Of course there was that one fateful day that led me right back to eating meat after that year and a half stretch of being a fully committed vegetarian. While my husband is a full on meat-eater, I still enjoy eating meatless meals throughout the days. Eating meatless meals is good for our bodies as well as our animal friends.
I became a big fan of veggie burgers while I was on a vegetarian diet. I enjoyed anything from frozen Boca and Morningstar burgers to a nice, grilled portobello mushroom on a bun. I've even tried fast food veggie burgers. Although I'm not quite sure they count since I have to assume the grills don't get cleaned between cooking meat and veggie patties.
With summer coming, I decided to try making my own homemade veggie burgers. What's better than a burger cooked out on the grill? How about a homemade veggie burger made with some easily accessible ingredients?
Avocado and Chickpea Veggie Burgers
These veggie burgers are protein packed and super easy to make! Although they're not vegan because they contain egg, I'm sure that plant based egg substitutions can be used in place of the real thing. I kept these burgers simple and didn't use a heck of a lot of seasoning, but there's definitely room to play around with different herbs and spices.
These burger patties start in a food processor or blender. Add the avocado chunks, chickpeas, garlic, egg, oil, and 1 cup of oatmeal to the food processor. Blend it all up until everything is combined and the mixture is pretty smooth.
Now, we're going to take the mixture and place it in a mixing bowl with the other cup of oatmeal. Mix that all up until it's combined.
Start forming the mixture into patties (it should make 6 average sized patties). Then, you can cook them on the grill or in an oiled skillet for about 3-4 minutes per side, or until they're golden brown on the outside and cooked through on the inside.
Serve the burgers on toasted buns with your favorite toppings! I like classic burger toppings like lettuce, tomato, onions, and pickles.
Homemade Avocado and Chickpea Burgers
Ingredients
- 1 medium avocado cut into chunks
- 1 - 16 oz. can chickpeas drained and rinsed
- 2 cloves of garlic minced
- 1 large egg
- 1 tbsp. olive oil vegetable oil, or coconut oil
- 2 cups plain old fashioned oatmeal divided
- 1 tsp. nutritional yeast
- Salt and pepper to taste
Instructions
- In a food processor, add avocado chunks, chickpeas, garlic, egg, oil, and 1 cup of oatmeal. Process until well-combined and mostly smooth.
- Transfer mixture to a large mixing bowl. Add the other cup of oatmeal, nutritional yeast, and salt and pepper.
- Mix well until combined and form the mixture into patties.
- Cook the burgers on the grill or in an oiled skillet for about 3-4 minutes on each side, or until warmed through and golden brown on the outside.
- Serve with toasted buns and your favorite burger toppings!
If you have burger patties leftover, separate them with wax paper, lay them flat in a freezer bag, and place in them in the freezer. Then, let the patties thaw in the fridge before cooking.
