In a large bowl, combine almonds, coconut, rice cereal, flaxseed, and cinnamon. Set aside.
In a saucepan, mix honey, salt and vanilla over medium heat.
Continue stirring until mixture reaches 260ยบ on a candy thermometer.
Pour the honey mixture over the dry ingredients and stir to coat.
Working quickly, transfer mixture onto a lined baking sheet. Spread the mix out evenly.
Allow mixture to cool completely, then cut into bars.
Wrap bars and store in a sealed container up to 1 week.
