It's Random Acts of Kindness Week!  When Ashley and I came up with this week's Maker's Mix-Up theme of KINDNESS, I didn't expect to have such a hard time trying to come up with a post!  I had a couple ideas for DIY projects, but nothing developed.

So then I started thinking about those bars you get in Starbucks.  You know the ones.  The healthy granola-type bars full of good-for-you ingredients.  That got me thinking.  I mean, I don't know about you, but I try to do at least one kind, selfless thing every day.  But how many times do we forget to treat ourselves kindly?

I can blame the cold, winter weather all I want for my bad eating habits.  But it's a matter of what I choose to put into my body.  I am happy to have an almost daily routine of walking with Hunter, but my crappy food choices don't exactly balance that exercise out.  And as hard as I try not to snack, sometimes I just need a little bite to hold me over.

I like to stock granola bars in the house every now and then to snack on.  I make sure they're not loaded up with chocolate (even though those are SO good) and sugary-sweet ingredients.  So during a recent trip to Whole Foods, I bought ingredients to make "Kindness Bars."

These bars are made with almonds, flaxseed, coconut flakes, and rice cereal.  Then, they're coated in a honey concoction that holds them together and gives them just enough sweetness.  When stocking up on these ingredients, make sure to hit the bulk section.  It'll save you a ton of money!  Since I only needed a tablespoon of flaxseed, it only cost me 30 cents! I was able to get a decent deal on the almonds, too!

Cook Time 30 minutes
Course Snack
Servings 8

Ingredients
  

  • 1 1/2 c. sliced almonds
  • 2 c. unsweetened coconut flakes
  • 1/2 c. brown rice cereal
  • 1 tbsp. flaxseed
  • 1 tsp. ground cinnamon
  • 1 c. organic honey
  • 1 tsp. vanilla extract
  • Pinch of salt

Instructions
 

  • In a large bowl, combine almonds, coconut, rice cereal, flaxseed, and cinnamon. Set aside.
  • In a saucepan, mix honey, salt and vanilla over medium heat.
  • Continue stirring until mixture reaches 260º on a candy thermometer.
  • Pour the honey mixture over the dry ingredients and stir to coat.
  • Working quickly, transfer mixture onto a lined baking sheet. Spread the mix out evenly.
  • Allow mixture to cool completely, then cut into bars.
  • Wrap bars and store in a sealed container up to 1 week.
