Leftover Thanksgiving Turkey Quesadilla

These Thanksgiving Turkey Quesadillas are a quick and delicious way to turn those leftovers into a post-holiday lunch or dinner. They're made with leftover stuffing, turkey, sage, cranberry sauce, cheese, and gravy on the side for dipping.

Ingredients

  • 1 tbsp. olive oil extra virgin
  • 4 soft flour tortillas
  • 2 cups stuffing
  • 2 cups turkey meat
  • 3 sage leaves chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cranberry sauce
  • Salt and pepper to taste
  • Optional: leftover gravy for dipping

Instructions

  • Wipe olive oil into a large skillet and heat over medium heat.
  • Spread half of the stuffing onto 1 tortilla. Place tortilla into skillet and add half of the turkey meat, half of the sage, half of the mozzarella cheese, and half of the cranberry sauce. Season with salt and pepper.
  • Place another tortilla on top and cook for about 3-5 minutes, or until golden brown and crispy.
  • Use a large spatula to carefully flip the tortilla over and cook for 3-5 minutes. Repeat with the other tortillas.
  • Then, slice the quesadillas into 4 pieces and serve. If desired, warm up gravy and serve with quesadillas for dipping.
