If you've been following me for a while, then you might remember that I've already made a Thanksgiving style quesadilla. But that was inspired by Trader Joe's Gobbler Quesadilla and made with turkey, butternut squash, kale, cranberries, and cheese. This quesadilla will help you use up those Thanksgiving Day leftovers - all the leftovers - in a totally fun and delicious way!
It's the best of Thanksgiving smashed between two soft flour tortillas. We're talking turkey, stuffing, cranberry sauce, herbs, and cheese. We put all of it smack dab in the middle of two tortillas. Then, we make the quesadilla nice and toasty by crisping it up in a pan. And if you're thinking that the quesadilla needs some kind of dipping sauce, warm up some of that leftover gravy!
This recipe combines two things that I absolutely love - Thanksgiving dinner and quesadillas - and there's really nothing better than that! Plus, the recipe is pretty customizable depending on the leftovers you have available. Add in some veggies, swap out the cheese - quesadillas are flexible like that!
Leftover Thanksgiving Turkey Quesadillas
So if you're looking for an easy meal to make the day after Thanksgiving, or that weekend, these quesadillas are yummy way to turn those turkey slices and sides into a whole new dish! This recipe makes two quesadillas, whips up quickly, and takes only one pan to make.
To start the quesadillas, we're going to heat olive oil in a skillet over medium heat. Then, we're going to slather one tortilla with some stuffing. Place half of the turkey, sage, shredded mozzarella, and cranberry sauce on top. Season with salt and pepper.
Now, we're going to place the other tortilla on top. Let the quesadilla cook for about 3-4 minutes, or until it's crispy. Flip the quesadilla over and let the other side get crispy. Then, repeat with the other tortilla and the rest of the ingredients.
Cut up the quesadillas into four pieces. But before serving, warm up leftover gravy if you've got it, and serve alongside the quesadillas for dipping.
Leftover Thanksgiving Turkey Quesadilla
Ingredients
- 1 tbsp. olive oil extra virgin
- 4 soft flour tortillas
- 2 cups stuffing
- 2 cups turkey meat
- 3 sage leaves chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup cranberry sauce
- Salt and pepper to taste
- Optional: leftover gravy for dipping
Instructions
- Wipe olive oil into a large skillet and heat over medium heat.
- Spread half of the stuffing onto 1 tortilla. Place tortilla into skillet and add half of the turkey meat, half of the sage, half of the mozzarella cheese, and half of the cranberry sauce. Season with salt and pepper.
- Place another tortilla on top and cook for about 3-5 minutes, or until golden brown and crispy.
- Use a large spatula to carefully flip the tortilla over and cook for 3-5 minutes. Repeat with the other tortillas.
- Then, slice the quesadillas into 4 pieces and serve. If desired, warm up gravy and serve with quesadillas for dipping.
