A medley of fall vegetables including Brussels sprouts, carrots, onions, garlic, and turnips are roasted with herbs and added to bow tie pasta. Then, the salad is dressed with a simple lemon and Parmesan cheese dressing to create a delicious pasta salad dish.

If you end up with leftover roasted veggies from your Thanksgiving gathering, throw them in a pasta salad! Pasta salad is such an easy dish to make. Plus, you can totally make it as an entrée or a side dish. I will eat pasta salad as a quick lunch during busy days - and you know there are plenty of those coming up - or serve it with a protein for dinner.
That's what I absolutely love about pasta salad. There really aren't any rules. Choose a pasta, choose some veggies, and you can even choose a protein and some cheese to add. Throw on a dressing and bam! Pasta salad! So this time around, I'm using roasted veggies that you might find on the holiday table - Brussels sprouts, onions, carrots, turnips, and some fresh herbs.
Roasting veggies brings out an extra sweetness in them. That makes them a delicious addition to a savory pasta salad. They balance out all of those herbaceous and acidic flavors so well. And if you don't have a leftover mix of roasted veggies, you can start from scratch and easily cook them on a sheet pan. I'll show you how to do that, too.
Roasted Vegetable Pasta Salad
If you're starting from scratch, the veggie combination is totally up to you! Grab some spinach, squash, sweet potatoes - whatever you've got left! It'll all come together to make one fantastic pasta salad. Then, we're going to throw together a quick lemon dressing and dig in!
If you're starting this from scratch, we've got to roast up our veggies. Grab a large mixing bowl. Then, add Brussels sprouts, red onions, garlic, carrots, turnips and chop up some herbs. I used rosemary and thyme. Toss it all together with olive oil, salt, and pepper.
Then, we're going to spread everything out onto a large sheet pan. Roast the veggies at 425 degrees for 20-30 minutes, or until they're tender and allow them to cool.
Now that the veggies are done, we can put the pasta salad together. Bring a pot of water to a boil and add the bowtie pasta. Cook the pasta for about 11 minutes, or until it's al dente. Then, drain and rinse with cold water. Allow the pasta to cool completely.
Add the pasta and roasted veggies to a large bowl. In a small bowl, mix up a quick dressing with lemon juice, olive oil, grated Parmesan cheese, garlic, and salt and pepper. Pour it over the salad and mix.
Serve the salad immediately, or allow salad to chill in the fridge before serving.
Roasted Vegetable Pasta Salad

- 1 large mixing bowl
- 1 large sheet pan
- Parchment paper
Ingredients
- For the roasted veggies:
- 3 tbsps. olive oil
- 16 oz. halved Brussels sprouts frozen
- 1 cup sliced carrots
- 1 1/4 cups turnips chopped
- 3/4 cups red onion cut into chunks
- 2 cloves garlic minced
- 1 sprig rosemary chopped
- 1/2 tbsps. thyme chopped
- For the pasta salad:
- 6 oz. bow tie pasta
- For the vinaigrette:
- 2 lemons juiced
- 1/4 cup olive oil
- 1/4 cup Parmesan cheese grated
- 1 clove garlic minced
- Salt and pepper
Instructions
- To roast the veggies:
- Preheat oven to 425 degrees and prepare a large sheet pan with parchment paper.
- Add vegetables and herbs to a large mixing bowl. Toss with olive oil and salt and pepper and spread onto sheet pan.
- Roast in oven for 20-30 minutes, or until desired doneness. Cool.
- To make the pasta salad:
- Bring a pot of salted water to a boil. Add bow tie pasta and cook 11 minutes, or until al dente.
- Drain and rinse with cold water and add to large mixing bowl along with roasted veggies.
- In small bowl, mix lemon juice, olive oil, Parmesan cheese, garlic, and salt and pepper. Pour over salad.
- Mix to combine and serve immediately, or chill in fridge until ready to serve.
You can double up on the dressing just to have a batch on hand. The pasta salad will soak up the dressing over time. If you're not a huge fan of lemon, you can cut the dressing back to one lemon or use vinegar instead.
