Leftover Turkey Fried Rice

This Leftover Turkey Fried Rice turns your Thanksgiving leftovers into a quick and delicious weeknight meal. It's made with white rice, a mix of veggies, scrambled eggs, chopped turkey, and a simple soy sauce.

Equipment

  • 1 large wok

Ingredients

  • 3 cups white rice cooked
  • 1 tbsp. olive oil
  • 1 1/2 cups frozen veggie mix like carrots, corn, green beans, and peas
  • 1/4 cup onion chopped
  • 2 cloves garlic minced
  • 2 large eggs beaten
  • 2 cups leftover turkey chopped
  • 2 tbsps. low sodium soy sauce
  • 1/4 tsp. ground ginger
  • 1/4 tsp. garlic powder
  • Salt and pepper to taste
  • Optional: chopped scallions, sesame seeds, Sriracha sauce

Instructions

  • In a large wok, or skillet, heat oil over medium-high heat.
  • Add frozen veggies, onion, and garlic to the wok, cooking for about 2 minutes.
  • Push veggie mix off to the side and add eggs. Scramble, just until set, about 3-4 minutes.
  • Add chopped turkey and rice to the wok. Season with salt and pepper and mix.
  • Stir in soy sauce, garlic powder, and ground ginger. Serve fried rice.
  • If desired, serve with toppings such as chopped scallions, sesame seeds, and Sriracha sauce.
