Welcome to November on the Holoka Home blog! This month, it's all about Thanksgiving! Well, actually, it's all about the Thanksgiving leftovers. Once the dinner is wrapped up, our bellies are full of turkey, sides, and pie, and the official start to the holiday season has been kicked off, it's time to divvy up the leftovers. And, man, do I love taking home leftovers!

Not only do I love reliving every bite of Thanksgiving dinner all over again, but I really enjoy turning our leftovers into new and interesting meals. So the first leftover idea I'm sharing is a pretty easy one - turkey fried rice. While I was brainstorming recipe content for this month, this was one of the first meals I thought to make. I mean, chicken fried rice is a pretty popular dish. So why not make fried rice with leftover turkey?

Not only will this fried rice recipe help you use up those turkey leftovers, but if you have any frozen veggies in the freezer, you can use them in this recipe as well. I used a mix of carrots, corn, green beans, and peas. Perfect for whipping up those holiday side dishes as well as making a simple and delicious fried rice!

Leftover Turkey Fried Rice

This fried rice is so easy and makes a tasty weeknight meal during this busy time of year. It's even easier if you have leftover rice (like white rice or brown rice) from the night before. Everything is cooked in a wok or pan. Then, serve it with your favorite fried rice toppings.

If your rice isn't cooked, go ahead and cook your rice. You'll need about 1 cup of dried rice to make about 3 cups of cooked rice. Once your rice is cooked, set it aside.

Add oil to a wok and heat over medium-high heat. Add the frozen veggie blend, onion, and garlic, cooking just until the veggies thaw, the onions begin to soften, and the garlic gets fragrant. Push everything off to the side.

Now, we're going to add our eggs into the wok and scramble them, just until they're set. Add chopped turkey and the cooked rice to the wok, season with salt and pepper, and mix to combine everything together.

Add the soy sauce, garlic powder, and ground ginger to the wok and stir to combine.

Serve stir fried with your favorite toppings like chopped scallions, sesame seeds, and Sriracha.

  • 1 large wok

Ingredients
  

  • 3 cups white rice cooked
  • 1 tbsp. olive oil
  • 1 1/2 cups frozen veggie mix like carrots, corn, green beans, and peas
  • 1/4 cup onion chopped
  • 2 cloves garlic minced
  • 2 large eggs beaten
  • 2 cups leftover turkey chopped
  • 2 tbsps. low sodium soy sauce
  • 1/4 tsp. ground ginger
  • 1/4 tsp. garlic powder
  • Salt and pepper to taste
  • Optional: chopped scallions, sesame seeds, Sriracha sauce

Instructions
 

  • In a large wok, or skillet, heat oil over medium-high heat.
  • Add frozen veggies, onion, and garlic to the wok, cooking for about 2 minutes.
  • Push veggie mix off to the side and add eggs. Scramble, just until set, about 3-4 minutes.
  • Add chopped turkey and rice to the wok. Season with salt and pepper and mix.
  • Stir in soy sauce, garlic powder, and ground ginger. Serve fried rice.
  • If desired, serve with toppings such as chopped scallions, sesame seeds, and Sriracha sauce.

This might be one of my new favorite ways to use up Thanksgiving turkey! It really does come together quickly and it tastes so good, too! It's also pretty customizable depending on what veggies you have left over from creating all of those delicious holiday sides.
