If the Thanksgiving holiday leaves you with leftover pie crust, you could always make more pie. I mean, there's nothing wrong with that! Or you could make delicious and savory hand pies. Kind of like a pot pie all wrapped up in a buttery, handheld crust. Like a delicious little hot pocket that's full of Thanksgiving flavors thanks to leftover turkey, veggies, and gravy!
That's what we're doing here, folks! Not only did I think this recipe would be really tasty - and it is - but it also gave me a good excuse to use the new hand pie cutters my mother-in-law got me. If you don't have hand pie cutters, you could cut them into a standard rectangular shape using a pizza cutter or knife.
So let's get to the good stuff! These hand pies are filled with a delicious mixture of chopped turkey, peas, carrots, green beans, corn, potatoes, Swiss cheese, and gravy. They're total comfort food that's entirely portable! Plus, these Thanksgiving leftover filled hand pies can be served anytime.
No, really! Serve them for dinner or as a side. Make them as a holiday appetizer or enjoy them as a snack. Hell! Heat them up for breakfast if you want! It's basically the holiday season now. There are no rules! Or you could save them for later by freezing them. Then, just thaw, bake, and eat!
Leftover Turkey Hand Pies
This recipe is pretty simple to make, too. The potatoes are boiled until tender and drained. Then, we mix them together with the veggies, turkey, and gravy. Cut the crusts, fill them up, seal them closed, and bake until golden brown. It really is that easy!
So let's get started on our filling! Boil the potatoes until they're fork tender, about 10 minutes. Drain the potatoes, cool, and place into a mixing bowl. Add the thawed veggies, chopped turkey, gravy, cheese, and seasonings, mixing everything together to combine.
When the mixture is ready, roll out the pie crusts. Cut them with hand pie cutters or cut them into equal rectangles. Then, spoon a little of the veggie, turkey, and gravy mixture into the center of one of the cut crust shapes.
Brush water around the edges of the crust. Then, place another piece of cut crust on top. Press down the edges with a fork to seal the crusts shut.
Once all of the hand pies are put together, brush the tops with a beaten egg.
Bake for about 30 minutes or until the crust is golden brown. Then, remove from the oven and serve warm.
Leftover Turkey Hand Pies
Ingredients
- 1 box refrigerated pie crusts, containing 2 crusts you may need more depending on how you're cutting them
- 1 large russet potato peeled and diced small
- 1 1/2 cups frozen veggie mix like carrots, corn, green beans, and peas, thawed
- 2 cups leftover turkey chopped
- 1 cup Swiss cheese shredded
- 1 1/4 cups gravy
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1/4 tsp. sage
- Salt and pepper to taste
- 1 large egg beaten
Instructions
- Preheat oven to 350 degrees. Spray two baking sheets with non-stick spray or line with parchment paper.
- Add diced potatoes to a medium pot and cover potatoes with water. Boil for 10 minutes, or until fork tender. Drain potatoes and allow to cool slightly.
- Once potatoes have cooled, place into a mixing bowl and add the rest of the veggies, turkey, cheese, gravy, and seasonings. Mix to combine.
- Unwrap the pie crusts and roll out. Use a hand pie cutter, knife or pizza cutter to cut crusts into small shapes.
- Spoon 1/4 cup of the mixture into the center of 1 cut pie crust. Brush the edges of the pie crust with water.
- Place another pie crust on top and use a fork to crimp the edges and seal the hand pies.
- Repeat until all of the hand pies are made.
- Brush pies with egg. Then, use a fork to poke holes on top of each pie.
- Carefully transfer the pies to the prepared baking sheets.
- Bake for 25-30 minutes, or until pies are golden brown.
Notes
I didn't add too much gravy to these hand pies. First, I didn't want it to completely ooze out of the pies while baking. And also, do you really want to bite into a mouthful of piping hot gravy? Not really. I just wanted to use enough to basically coat everything and give it some of that warm and cozy gravy flavor.
