This Lemon Pepper Pretzel Crusted Salmon is made with rich and mild Atlantic salmon fillets topped with a bright and peppery, buttery pretzel crust.

- 1/2 cup Lemon Pepper OMG! Pretzels crushed
- 1/2 tbsp. unsalted butter melted
- 2 - 5 oz. salmon fillets without skin
- 2 tsp. olive oil
- Salt and pepper to taste
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
In a small bowl, combine the pretzels and butter.
Brush the top of each salmon fillet with olive oil and season with salt and pepper.
Press the salmon into the pretzel mixture to coat.
Place the fish onto the prepared baking sheet.
Bake 20-22 minutes, or until cooked through until your desired doneness (at least 145ยบ internal temperature).
Allow the salmon to rest a minute or two, then serve.
