I recently received another box of pretzels from my friends at OMG! Pretzels. As soon as I opened the box and saw the Lemon Pepper flavor, I knew I wanted to turn the pretzels into a breading, or crust, of some sort. When I popped one of the seasoned pretzel nuggets into my mouth, I immediately knew the flavor was a sure winner!
I'm a fan of lemon pepper pretty much on anything. Like have you tried it on pizza? Life changing! I can thank a childhood friend for that combo. It's that citrusy flavor paired with a zesty bite that's just so darn good! Since lemon and pepper work so well in seafood dishes, I decided to make salmon with a lemon pepper pretzel crust on top.
I get that salmon might not be everything's favorite fish. So before I move onto the recipe, let me give you a few different types of fish that you can use in this dish instead. I would suggest using a fish that can handle a pretzel crust - mahi mahi, cod, tilapia, or another firm variety.
Lemon Pepper Pretzel Crusted Salmon
Now we can get cooking! All you need is four easy ingredients to whip up this flavorful salmon dish. Serve it with a side of sautéed green beans, a green salad, a baked sweet potato, or roasted potatoes.
The first thing we need to do is prepare our pretzel crust. There are two ways of doing this.
- Add the pretzels to a Ziploc bag and use a rolling pin to crush the pretzels into a thicker-than-bread-crumbs-but-thinner-than-stuffing consistency.
- You can also add them to a food processor and pulse until they're the right consistency.
Now, we're going to melt a little butter and mix it with the pretzels. Set aside.
Brush each salmon fillet with olive oil and season with salt and pepper. Press the salmon into the pretzel mixture to coat. If necessary, use your hands to push the pretzel mixture onto the fish.
Place the salmon onto a parchment lined baking sheet and bake for about 20 minutes at 350 degrees. I like my salmon a little well done so I might go 22 minutes. Allow the salmon to rest a few minutes before serving.
Lemon Pepper Pretzel Crusted Salmon
Ingredients
- 1/2 cup Lemon Pepper OMG! Pretzels crushed
- 1/2 tbsp. unsalted butter melted
- 2 - 5 oz. salmon fillets without skin
- 2 tsp. olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- In a small bowl, combine the pretzels and butter.
- Brush the top of each salmon fillet with olive oil and season with salt and pepper.
- Press the salmon into the pretzel mixture to coat.
- Place the fish onto the prepared baking sheet.
- Bake 20-22 minutes, or until cooked through until your desired doneness (at least 145º internal temperature).
- Allow the salmon to rest a minute or two, then serve.
