This Marinated Charcuterie Salad has all the flavors of a classic charcuterie board in one easy bowl. It's an easy make-ahead appetizer made with gherkins, olives, provolone, salami, sundried tomatoes, onion, pepperoncini, and basil.

Ingredients
For the salad:
1cupmini gherkinshalved or quartered
3/4cupmedium green olivessliced
8oz.provolone cheesecubed
6oz.Genoa salami sliceshalved or quartered
1/2cupsundried tomatoessliced
1/4cuponionsliced thin
2tbsps.pepperoncinisliced
2tbsps.fresh basil leaveschopped
For the marinade:
1/3cupolive oil
2tbsps.red wine vinegar
1tsp.Dijon mustard
1tsp.Italian seasoning
1small garlic cloveminced
Pepperto taste
Pinch ofcrushed red pepper flakesoptional
Instructions
In a large mixing bowl, combine the gherkins, olives, provolone cheese, salami, sundried tomatoes, onion, pepperoncini, and basil.
In a small mixing bowl, whisk the olive oil, vinegar, mustard, Italian seasoning, minced garlic, pepper, and pinch of red pepper flakes together.
Pour dressing over the salad and toss to coat.
Cover and chill in the fridge at least 30 minutes.
Toss once more before serving.
Serve in small bowls, or with crackers or sliced bread.
Notes
How to store: Store leftover salad in an airtight container in the fridge for up to 4 days. Before serving, give it a quick stir as the marinade may settle at the bottom of the container.
