Marinated Charcuterie Salad

This Marinated Charcuterie Salad has all the flavors of a classic charcuterie board in one easy bowl. It's an easy make-ahead appetizer made with gherkins, olives, provolone, salami, sundried tomatoes, onion, pepperoncini, and basil.

Ingredients

For the salad:

  • 1 cup mini gherkins halved or quartered
  • 3/4 cup medium green olives sliced
  • 8 oz. provolone cheese cubed
  • 6 oz. Genoa salami slices halved or quartered
  • 1/2 cup sundried tomatoes sliced
  • 1/4 cup onion sliced thin
  • 2 tbsps. pepperoncini sliced
  • 2 tbsps. fresh basil leaves chopped

For the marinade:

  • 1/3 cup olive oil
  • 2 tbsps. red wine vinegar
  • 1 tsp. Dijon mustard
  • 1 tsp. Italian seasoning
  • 1 small garlic clove minced
  • Pepper to taste
  • Pinch of crushed red pepper flakes optional

Instructions

  • In a large mixing bowl, combine the gherkins, olives, provolone cheese, salami, sundried tomatoes, onion, pepperoncini, and basil.
  • In a small mixing bowl, whisk the olive oil, vinegar, mustard, Italian seasoning, minced garlic, pepper, and pinch of red pepper flakes together.
  • Pour dressing over the salad and toss to coat.
  • Cover and chill in the fridge at least 30 minutes.
  • Toss once more before serving.
  • Serve in small bowls, or with crackers or sliced bread.

Notes

How to store: Store leftover salad in an airtight container in the fridge for up to 4 days.  Before serving, give it a quick stir as the marinade may settle at the bottom of the container.
