The best part of the Super Bowl, in my opinion, is the snacks. We’re not exactly big Super Bowl people around here. We might tune into the commercials or the halftime show, but you’ll never catch us throwing a full-blown game day party. Still, I’ll happily use the occasion as an excuse to put together a solid spread of appetizers. Because honestly, any reason to snack is a good reason in my book.

That’s where this Marinated Charcuterie Salad comes in. It takes everything I love about a classic charcuterie board - salty meats, creamy cheese, pickled vegetables, and other bold flavors - and turns it into an easy appetizer that’s perfect for snacking. With this salad, there's no need to arrange a big board or stress over presentation. Just pack all of the flavors of charcuterie into one, easy-to-serve bowl.

So what's in this salad? Well, we start with briny bites like mini gherkins, olives, and pepperoncinis. Then, we toss in some sharp Provolone cheese, salty salami, onion, and sundried tomatoes. It's mixed all together in a tangy vinaigrette marinade. It's so delicious and flavorful that you might want to ditch the dippers (like crackers or bread) and dig right in with toothpicks or a fork!

Whether you're having a big game day party or keeping it casual for Super Bowl Sunday, this marinated salad is just like charcuterie without the board. It's full of bold, salty, snack-worthy flavors you'd expect from a traditional spread, but made in an easy, scoopable dish. Plus, it can be made ahead of time - and might be better made ahead of time - so the flavors can meld together.

Let's get this salad started by chopping and slicing up our ingredients. Then, we're going to place the gherkins, olives, provolone cheese, salami, sundried tomatoes, onion, pepperoncini, and basil in a mixing bowl.

In a smaller mixing bowl, we're going to whip up our marinade. Add olive oil, vinegar, mustard, Italian seasoning, minced garlic, pepper, and pinch of red pepper flakes to the bowl and whisk together.

Pour the dressing over the salad and mix together to coat. Then, cover the salad and place it in the fridge for at least 30 minutes. The longer it sits (up to an hour or two), the better and more flavorful it will be.

Toss the salad once more before serving. Then, serve in small bowls, or with your favorite crackers, or some sliced bread.

Ingredients
  

For the salad:

  • 1 cup mini gherkins halved or quartered
  • 3/4 cup medium green olives sliced
  • 8 oz. provolone cheese cubed
  • 6 oz. Genoa salami slices halved or quartered
  • 1/2 cup sundried tomatoes sliced
  • 1/4 cup onion sliced thin
  • 2 tbsps. pepperoncini sliced
  • 2 tbsps. fresh basil leaves chopped

For the marinade:

  • 1/3 cup olive oil
  • 2 tbsps. red wine vinegar
  • 1 tsp. Dijon mustard
  • 1 tsp. Italian seasoning
  • 1 small garlic clove minced
  • Pepper to taste
  • Pinch of crushed red pepper flakes optional

Instructions
 

  • In a large mixing bowl, combine the gherkins, olives, provolone cheese, salami, sundried tomatoes, onion, pepperoncini, and basil.
  • In a small mixing bowl, whisk the olive oil, vinegar, mustard, Italian seasoning, minced garlic, pepper, and pinch of red pepper flakes together.
  • Pour dressing over the salad and toss to coat.
  • Cover and chill in the fridge at least 30 minutes.
  • Toss once more before serving.
  • Serve in small bowls, or with crackers or sliced bread.

Notes

How to store: Store leftover salad in an airtight container in the fridge for up to 4 days.  Before serving, give it a quick stir as the marinade may settle at the bottom of the container.
