This Mediterranean Kale Pasta Salad is made with cavatappi pasta, shredded kale, feta cheese, shredded Parmesan, and sundried tomatoes in a fresh basil garlic oil. It’s a flavorful summer side dish or a deliciously satisfying lunch!

Ingredients
8oz.cavatappi corkscrew pasta
2clovesgarlic
2/3cupfresh basilwashed and torn
1/4cupextra virgin olive oil
1tbsp.water
1tbsp.white vinegar
Pinchcrushed red pepper
6cupschopped kale
8oz.feta cheese blockcubed
1cupshredded Parmesan
1cupsundried tomatoeschopped
Salt and pepperto taste
Instructions
Bring pot of salted water to a boil. Cook pasta according to package. Drain, rinse with cold water, and set aside.
In blender or food processor, add garlic, basil, olive oil, water, vinegar, and red pepper. Season with salt and pepper and pulse until smooth.
Add kale to a large mixing bowl. Drizzle 1 tablespoon of basil oil over kale and massage into leaves.
Add the cooled pasta, feta cheese, Parmesan cheese, and sundried tomatoes to the kale. Stir to combine.
Pour in the rest of the basil garlic oil and stir to combine.
Season the pasta salad with salt and pepper and serve immediately or chill in the fridge.
