This Mediterranean Tuna Salad is made with canned tuna, roasted red peppers, marinated artichokes, and capers. Serve it with crackers for a light and easy lunch.

Ingredients
1 - 5oz.can solid white tuna in waterdrained
1/4cuproasted red pepperschopped
1/4cupmarinated artichoke heartschopped
Generous 1 tbsp. capers
1tbsp.olive oil
1 1/2tbsps.red wine vinegar
Pinchof dried oregano
Salt and pepperto taste

Instructions
Add the can of tuna, drained, into a mixing bowl.
Add the roasted red peppers, artichoke hearts, and capers.
In a small bowl, stir the olive oil, vinegar, oregano, and salt and pepper together.
Pour mixture into the bowl of tuna. Mix with a fork to break up any large chunks of tuna.
Serve salad immediately with your favorite crackers.
