Mediterranean Tuna Salad and Crackers

This Mediterranean Tuna Salad is made with canned tuna, roasted red peppers, marinated artichokes, and capers. Serve it with crackers for a light and easy lunch.

Ingredients

  • 1 - 5 oz. can solid white tuna in water drained
  • 1/4 cup roasted red peppers chopped
  • 1/4 cup marinated artichoke hearts chopped
  • Generous 1 tbsp. capers
  • 1 tbsp. olive oil
  • 1 1/2 tbsps. red wine vinegar
  • Pinch of dried oregano
  • Salt and pepper to taste
  • Crackers

Instructions

  • Add the can of tuna, drained, into a mixing bowl.
  • Add the roasted red peppers, artichoke hearts, and capers.
  • In a small bowl, stir the olive oil, vinegar, oregano, and salt and pepper together.
  • Pour mixture into the bowl of tuna. Mix with a fork to break up any large chunks of tuna.
  • Serve salad immediately with your favorite crackers.
