Mediterranean Tuna Salad and Crackers

I'm really good at planning lunches and dinners during the week.  But for some reason, when the weekend hits, I'm totally clueless about what to make.  While my husband's totally content to nosh on a sandwich, I tend to be a little extra.  And that's when I start getting creative in the kitchen.

That's basically how this new lunch idea came together.  I was digging around my cabinets for something to eat and grabbed a can of tuna.  From there, I started adding all sorts of things to it and created a mayo-less Mediterranean style tuna salad.  Instead of digging in with a fork, I decided to enjoy this salad with crackers.

This tuna salad has all kinds of good and tasty ingredients in it!  It's made with roasted red peppers, marinated artichoke hearts, capers, and finished with a splash of olive oil, red wine vinegar, oregano, and salt and pepper.  It's super flavorful and such an easy lunch to whip up!

Mediterranean Tuna Salad and Crackers

Not only is this salad delicious with crackers, but it would also be tasty mixed into a green salad.  This light lunch option can also be prepped ahead of time and will last a few days in the fridge.

To start this tuna salad, drain a can and add it to a mixing bowl.  Then, we can start chopping the roasted peppers and marinated artichoke hearts.  Add them to the tuna along with the capers.

Red wine vinegar, olive oil, oregano, salt, and pepper in a plastic cup being poured over a mixing bowl.

In a small bowl, mix olive oil, red vinegar, and salt and pepper together.  Pour it onto the tuna mixture and stir to combine.

And that's it!  It's such a simple salad that's big on flavor!  All that's left to do is grab some crackers and dig in!  I like to eat this salad with a sturdier cracker like Crunchmaster or Triscuits.

Ingredients
  

  • 1 - 5 oz. can solid white tuna in water drained
  • 1/4 cup roasted red peppers chopped
  • 1/4 cup marinated artichoke hearts chopped
  • Generous 1 tbsp. capers
  • 1 tbsp. olive oil
  • 1 1/2 tbsps. red wine vinegar
  • Pinch of dried oregano
  • Salt and pepper to taste
  • Crackers

Instructions
 

  • Add the can of tuna, drained, into a mixing bowl.
  • Add the roasted red peppers, artichoke hearts, and capers.
  • In a small bowl, stir the olive oil, vinegar, oregano, and salt and pepper together.
  • Pour mixture into the bowl of tuna. Mix with a fork to break up any large chunks of tuna.
  • Serve salad immediately with your favorite crackers.
