Mini Christmas Sugar Cookie Cheesecakes

Mini homemade cheesecakes are made with a sweet and creamy filling with a ready-to-bake Christmas sugar cookie as the crust. These individual cheesecakes are a delicious way to end a holiday celebration!

Equipment

  • 1 12 cup standard muffin pan
  • 1 large mixing bowl

Ingredients

  • 1 package Christmas Pillsbury Shape Sugar Cookie Dough
  • 2 8 oz. packages cream cheese softened
  • 1/2 cup sugar
  • 1/4 cup heavy cream
  • 1 tsp. vanilla extract
  • 2 large eggs
  • 1/4 cup Christmas sprinkle mix

Instructions

  • Preheat oven to 350 degrees. Line a standard 12 cup muffin pan with cupcake liners.
  • Place a ready-to-bake sugar cookie into each liner. Bake 12 minutes, or until edges are lightly golden brown.
  • In a large mixing bowl, beat cream cheese, sugar, heavy cream, and vanilla until smooth.
  • Add eggs to the mixture and beat until combined. Fold in sprinkles.
  • Spoon about 1/4 cup of cheesecake filling into each muffin cup. Smooth filling down into cup.
  • Bake mini cheesecakes 22-24 minutes, or until edges are set and slightly golden brown and center of cheesecake is jiggly.
  • Cool pan on wire rack for 30 minutes. Then, cool cheesecakes fully in fridge for 1 hour.
  • Serve cheesecakes with dollop of whipped cream and sprinkles on top.
