Mini Christmas Sugar Cookie Cheesecakes

Mini homemade cheesecakes are made with a sweet and creamy filling with a ready-to-bake Christmas sugar cookie as the crust. These individual cheesecakes are a delicious way to end a holiday celebration!

I was scrolling through my Instagram feed and came across an ad for a travel muffin tin. The tin was lined with cupcake liners and filled with holiday print sugar cookies. It gave me such an idea - mini cheesecakes using sugar cookies as a crust. So the next time I went grocery shopping, I grabbed some holiday print sugar cookies and ingredients to whip up an easy cheesecake filling.

Those ready-to-bake cookies come in so many cute designs this time of year, but I decided to give my cheesecakes a snowman sugar cookie crust. I also wanted to embrace the whole "holiday cookie" theme, so I added a red and green Christmas sprinkle mix to the cheesecake filling as a festive touch.

Once the mini cheesecakes were baked and cooled, I added a dollop of whipped cream on top and an extra shake of holiday sprinkles to dress them up a bit more. These little cheesecakes ended up being the perfect little holiday dessert! They're pretty easy to put together, too, which is always a big plus this time of year.

Mini Christmas Sugar Cookie Cheesecakes

Even though I used snowmen, you could use whichever holiday character sugar cookie design you want. You could also stay on theme with your cupcake liners and Christmas sprinkle mix. These are an excellent portable dessert to take with you to holiday celebrations. Just wait until you get to your destination to add the whipped cream on top.

To start these individual cheesecakes, we need to line a 12 cup standard muffin pan with cupcake liners and preheat the oven to 350 degrees.

Place a ready-to-bake cookie into each liner and bake for about 12 minutes, or until golden brown. You'll probably end up with extra cookies. You can bake them later or keep them in the fridge or freezer.

In a large mixing bowl, beat the cream cheese, sugar, heavy cream, and vanilla together until smooth. Add the eggs and beat until combined. Fold in the holiday sprinkles.

Use an ice cream scoop or large spoon to spoon about 1/4 cup of the cheesecake filling into each muffin cup. Smooth filling in each cup.

Bake the mini cheesecakes for 22-24 minutes. The edges will be set and slightly golden while the center of the cheesecakes should jiggle a little bit.

Cool the pan on a wire rack for 30 minutes. Then, allow the cheesecakes to fully chill in the fridge for an hour.

Once the cheesecakes are ready, serve them with a dollop of whipped cream and some more holiday sprinkles on top.

Ingredients
  

  • 1 package Christmas Pillsbury Shape Sugar Cookie Dough
  • 2 8 oz. packages cream cheese softened
  • 1/2 cup sugar
  • 1/4 cup heavy cream
  • 1 tsp. vanilla extract
  • 2 large eggs
  • 1/4 cup Christmas sprinkle mix

Instructions
 

  • Preheat oven to 350 degrees. Line a standard 12 cup muffin pan with cupcake liners.
  • Place a ready-to-bake sugar cookie into each liner. Bake 12 minutes, or until edges are lightly golden brown.
  • In a large mixing bowl, beat cream cheese, sugar, heavy cream, and vanilla until smooth.
  • Add eggs to the mixture and beat until combined. Fold in sprinkles.
  • Spoon about 1/4 cup of cheesecake filling into each muffin cup. Smooth filling down into cup.
  • Bake mini cheesecakes 22-24 minutes, or until edges are set and slightly golden brown and center of cheesecake is jiggly.
  • Cool pan on wire rack for 30 minutes. Then, cool cheesecakes fully in fridge for 1 hour.
  • Serve cheesecakes with dollop of whipped cream and sprinkles on top.

Did Your Cheesecakes Crack?

My cheesecakes did crack, which could be a sign of a few things. It could mean the cream cheese wasn't softened enough and too cold. It could also be a sign of overmixing or overbaking. Despite the cracks, the cheesecakes will still be delicious. I also found that the texture didn't change as much. I still ended up with light, jiggly cheesecakes.
