Ingredients
2peachespeeled and pitted
1 1/2-2tbsps.honeyor simple syrup
1tbsp.fresh lemon juice
1cupplain sparkling water
Fresh mint or peach slicesfor garnish
Instructions
For the peach puree:
Blend peaches, honey, and lemon juice in blender until smooth.
Strain peach mixture to remove pulp.
Chill in fridge at least 15 minutes.
For the Peach Bellini Mocktail:
Add about 4 tablespoons of prepared peach puree to two champagne flutes or other drinking glasses.
Slowly pour sparkling water over the puree.
Gently stir to combine.
If desired, garnish with fresh mint and/or peach slice and serve.
