Peaches are just about to hit peak season here in Jersey. But I've been buying peaches for weeks now. I've been enjoying them just as they are, mixed into yogurt or cottage cheese, and even split in half and grilled. One thing I decided to make during this week's sweltering heat was some kind of homemade peachy beverage. I landed on a Peach Bellini mocktail - fancy, fizzy, fun, and non-alcoholic so I could drink it any time throughout the day!

Peach Bellinis are typically made with just two ingredients - white peach puree and sparkling wine, like Prosecco. For this recipe, I made my own easy peach puree (made with whatever peaches I had in the fridge at the moment) and topped it with plain sparkling water instead of wine. So easy and it's the type of drink that you want to sip to savor cause it's just that enjoyable!

This bougie little beverage was a great way to use up a couple of the peaches sitting in the fridge. I only needed two ripe peaches to make it, a tablespoon of honey (you could use simple syrup, too), lemon juice, and sparkling water. It's incredibly refreshing poured over ice and full of that peachy, summertime flavor! I even pulled some mint from my garden to use as a garnish. Cause why not?

Peach Bellini Mocktail

This light and fruity mocktail is super easy to put together. It's really just two simple steps - blending the puree and mixing it in a glass with sparkling water. While I used plain sparkling water, you could add even more flavor by using a peach flavored sparkling water instead. Don't forget to garnish with a peach slice or fresh mint for a pretty touch!

Before we can get our sip on, we need to whip up our puree. But don't worry! It's really easy to make. Just add a couple peeled and pitted peaches to a blender with honey and fresh lemon juice. Blend, blend, blend until it's nice and smooth.

Then, we're going to strain it to remove any pulp. Throw the puree into a container or jar and keep it in the fridge for about 15 minutes so it chills.

Once the puree has chilled, add about 4 tablespoons to two champagne flutes (or your average drinking glasses if you're not feeling fancy). Now we're going to slowly pour the plain sparkling water over the puree and give it the gentlest of stirs.

Before we enjoy our delightful summertime sip, grab a sprig of mint from the garden and use it to garnish your drink. No garden? Add a peach slice instead! Enjoy!

Ingredients
  

  • 2 peaches peeled and pitted
  • 1 1/2-2 tbsps. honey or simple syrup
  • 1 tbsp. fresh lemon juice
  • 1 cup plain sparkling water
  • Fresh mint or peach slices for garnish

Instructions
 

For the peach puree:

  • Blend peaches, honey, and lemon juice in blender until smooth.
  • Strain peach mixture to remove pulp.
  • Chill in fridge at least 15 minutes.

For the Peach Bellini Mocktail:

  • Add about 4 tablespoons of prepared peach puree to two champagne flutes or other drinking glasses.
  • Slowly pour sparkling water over the puree.
  • Gently stir to combine.
  • If desired, garnish with fresh mint and/or peach slice and serve.
