Pepperoni Pizza Breakfast Scramble
This Pepperoni Pizza Breakfast Scramble made with Hormel Pepperoni Minis is a lighter alternative to a slice of leftover pizza!

- 3 egg whites
- 1/2 cup grape tomatoes sliced
- 1 cup baby spinach
- 1/4 cup Hormel Pepperoni Minis
- 2/3 cup bocconcini cut into chunks (or use mini bocconcini)
- fresh basil for garnish (optional)
- salt and pepper
- non-stick cooking spray
Spray a skillet with non-stick cooking spray. Heat on medium.
Add baby spinach and allow to wilt.
Once spinach is wilted, add your tomatoes.
While your tomatoes are cooking, lightly whisk your egg whites. Add salt and pepper.
Add egg whites to skillet. When eggs are almost set, add your pepperoni minis.
Continue cooking until eggs are completely set.
Right before serving, add bocconcini.
Garnish with fresh basil leaves and enjoy!
