Pepperoni Pizza Breakfast Scramble

This Pepperoni Pizza Breakfast Scramble made with Hormel Pepperoni Minis is a lighter alternative to a slice of leftover pizza!

Ingredients

  • 3 egg whites
  • 1/2 cup grape tomatoes sliced
  • 1 cup baby spinach
  • 1/4 cup Hormel Pepperoni Minis
  • 2/3 cup bocconcini cut into chunks (or use mini bocconcini)
  • fresh basil for garnish (optional)
  • salt and pepper
  • non-stick cooking spray

Instructions

  • Spray a skillet with non-stick cooking spray. Heat on medium.
  • Add baby spinach and allow to wilt.
  • Once spinach is wilted, add your tomatoes.
  • While your tomatoes are cooking, lightly whisk your egg whites. Add salt and pepper.
  • Add egg whites to skillet. When eggs are almost set, add your pepperoni minis.
  • Continue cooking until eggs are completely set.
  • Right before serving, add bocconcini.
  • Garnish with fresh basil leaves and enjoy!
