Pumpkin Spice Overnight Oats

Fall meal prep just got easier with this Pumpkin Spice Overnight Oats recipe made with pumpkin puree, pumpkin pie spice, oat milk, chia seeds, and honey!

Ingredients

  • 1/3 cup old-fashioned rolled oats
  • 1/3 cup pumpkin puree
  • 1/3 cup oat milk or milk of your choice
  • 1 tsp. chia seeds
  • 1/2 tsp. pumpkin pie spice
  • 1 tsp. honey
  • Optional: whipped cream dried cranberries, chopped pecans

Instructions

  • In a mixing bowl, mix the oats, pumpkin puree, oat milk, chia seeds, pumpkin pie spice, and honey together.
  • Spoon the oat mixture into a glass jar or container.
  • Keep the oats in the fridge for at least 2-4 hours, or overnight.
  • Once they're set, remove from fridge and top with whipped cream, dried cranberries, or chopped pecans, if desired.
