Slow Cooker Beef and Broccoli

This Slow Cooker Beef and Broccoli is an easy weeknight meal made with tender beef and broccoli florets with mushrooms in a flavorful Asian-inspired sauce.

Ingredients

  • 1 package stew beef
  • 1 cup beef broth
  • 1 package Lipton Beefy Onion Soup Mix
  • 1/2 cup soy sauce or coconut aminios
  • 1 1/2 tbsp. brown sugar
  • 2 garlic cloves minced or grated
  • 1 tsp. ground ginger
  • Salt and pepper to taste
  • Cornstarch slurry 1 tbsp. cornstarch + 1 1/2 tbsps. water, stirred together
  • 2-3 cups fresh broccoli florets
  • 6 oz. white mushrooms sliced
  • Sesame seeds to garnish

Instructions

  • Add everything but the cornstarch slurry, broccoli, and mushrooms to the slow cooker. Season with salt and pepper and stir.
  • Cover and set the slow cooker for 8 hours on low temperature.
  • When there's 30 minutes remaining, add the cornstarch slurry, broccoli, and mushrooms to the slow cooker.
  • Do not place the lid back on. This will help the sauce to thicken up.
  • Once the beef and broccoli is ready, serve with sesame seeds to garnish and a side of rice, if desired.
